Slow Cooker Gingerbread with Dried Cherries

1. Spray a 4-qt slow cooker with the cooking spray 2
- Vegetable cooking spray
- 3 cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/4 tsp salt
- 1/4 tsp ground allspice
- 1 cup butter (2 sticks softened)
- 1/2 cup packed brown sugar
- 4 eggs
- 3/4 cup molasses
- 1 cup V8 or Garden Cocktail
- 1 cup dried cherries
- Whipped Cream (optional)
Becel Anything Goes Cookie Dough Salted Caramel Cookies

Preheat oven to 375°F (190 C)
- 2 1/4 cups all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup Becel® Buttery Taste margarine*
- 1 cup firmly packed light brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tsp. vanilla extract
- 3/4 cup toffee bits
- 3/4 cup butterscotch chips

Easy Cranberry & Apple Cake

- 12 ozs fresh cranberries (frozen work well also)
- 1 tart apple, peeled, cored and diced
- 1/2 cup brown sugar, lightly packed
- 1 Tbsp grated orange rind (2 oranges)

- 1 1/8 tsp ground cinnamon, divided

- 1 cup plus 1 Tbsp white sugar

- 1 Tbs. minced fresh rosemary
- 2 cups chopped broccoli raab
- 4 cloves garlic, minced (4 tsp.)
- 5 large egg whites
- 3 large whole eggs
- 3/4 cup shredded Swiss or Gruyere cheese

Spiced Pumpkin Butter

- 1 15-ounce can pumpkin puree (NOT pumpkin pie filling)
- 1/2 cup spiced apple cider (or apple juice)
- 1 tablespoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/2 cup brown sugar
- 1/2 cup pecan pieces (optional)
Black Bean Confetti Salad

Mix all the ingredients in a large bowl, cover, and let marinate in the refrigerator for a few hours before serving

- 1 cup frozen corn, thawed and drained
- 12 cherry or grape tomatoes, halved

- 2 cloves garlic, pressed
- 1/2 cup diced sweet red pepper

- 3 Tbsps lime juice

Curried Pumpkin Soup

This is a wonderful soup that can also be done in a crockpot with minimal effort
- 1/2 lb fresh mushrooms (any brand - Cremini is my favourite)
- 15 oz can pumpkin
- 1/2 cup onions
- 12 oz can Carnation low fat evaporated milk
- 2 TBSP butter
- 1 TBSP honey
- 2 TBSP all purpose flour
- 1/2 tsp salt
- 1 tsp curry powder (or more depending on your taste)
- 1/4 tsp black pepper
- 3 cups vegetable broth
- 1/4 tsp ground nutmeg
