Three Sisters Stew

The three sisters - corn, squash and beans - merge into a delicious stew
- 1 Tbsp olive or canola oil
- 1 large onion, diced or sliced
- 1 clove garlic, chopped
- 1 jalapeno chile, seeded and minced
- 1 lb medium-sized yellow summer squash, sliced
- 2 medium-sized zucchini, chunked
- 1 lg butternut squash, peeled, seeded and chunked
- 1 lb green beans, sliced into bite size pieces
- 1 cup corn kernels, preferably fresh
- 2 x16 oz cans kidney beans, drained and rinsed
- 1 cup vegetable stock or water
- 1 Tbsp fresh thyme leaves
- Salt and freshly ground black pepper to taste
Blackberry Coffee Cake

1 Heat oven to 350°F. Grease bottom and side of 10-inch angel food (tube) cake pan with shortening; lightly flour
- BLACKBERRY FILLING
- 1 1/4 cups frozen (thawed and well drained) blackberries
- 1/2 cup finely chopped pecans
- 3 tablespoons granulated sugar
- 1 1/2 teaspoons ground cinnamon
- COFFEE CAKE
- 2 1/4 cups Gold Medal™ all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/4 cups granulated sugar
- 1 cup butter or margarine, softened
- 1 teaspoon vanilla
- 2 eggs
- 1 container (8 ounces) sour cream
- POWDERED SUGAR GLAZE
- 1 1/2 cups powdered sugar
- 3 to 4 teaspoons water
Curried Cream of Celery Soup

1. If using almonds for garnish
- 1/4 cup sliced almonds for garnish
- 2 Tbs. olive oil
- 6 celery stalks, diced (3 1/2 cups)
- 1 large leek, white part halved lengthwise and thinly sliced (2 cups)
- 3/4 tsp. salt
- 2 apples, peeled, cored, and diced (2 cups)
- 1 Tbs. curry powder, such as Madras
- 1 14-oz. can light coconut milk
- 2 Tbs. rice
- 2 1/2 cups low-sodium vegetable broth
- 1 Tbs. lime juice
- 1/4 cup coarsely chopped celery leaves, for garnish
Onion Fritters

Onion fritters can be made very easily and quickly at home, and are enjoyed with green chutney or chili sauce
- 4 large onions
- 4 cloves garlic
- 3/4 cup chick pea flour (besan)
- 1/2 cup flour
- 1 egg
- 1 1/2 tsp bicarbonate of soda
- 1 tsp chili powder
- salt to taste
- vegetable oil for shallow frying

- 1/2 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed

- 1 to 2 teaspoons orange extract, optional (I did not use and cookies were still 'orangey' enough, but for extra orange flavor, use it)

- 2 tablespoons freshly grated orange zest
- 2 cups all-purpose flour

- 1 teaspoon baking soda

Carrot-Orange Smoothie

- 2 Tbs. ground flaxseed

- 2 cups dried elbow macaroni (8 ounces)
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup whipping cream
- 1 cup whole milk
- 4 ounces Fontina cheese, shredded (1 cup)
- 1 15 ounce can pumpkin
- 1 tablespoon snipped fresh sage or 1/2 teaspoon dried leaf sage, crushed
- 1/2 cup soft bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/3 cup chopped walnuts
- 1 tablespoon olive oil
- Sage leaves (optional)
Peanut Butter Cup Baked Oatmeal

This recipe serves 1 but can be increased to serve any number
- PANCAKES
- 1/2 cup rolled oats
- 1/4 tsp pure vanilla extract
- 1/4 cup mashed banana (or sub another mashed fruit)
- 1/4 cup milk of choice
- 1 stevia packet or 1 1/2 TBSP liquid sweetner such as maple syrup or agave (if using liquid sweetner, scale back the milk to just 2 TBSPS)
- 1/8 tsp salt
- 1 TBSP cocoa powder
- 1 to 2 TBSP peanut butter (or other nut butter or sunbutter)
- Handful of chocolate chips (optional)
- REESES PIECES FROSTING (Yields almost 1/2 cup)
- 1/4 cup peanut butter (or other nut butter)
- 4 to 8 tsp pure maple syrup
- 2 TBSPS cocoa powder
- 4 tsp milk of choice (or more for a thinner frosting)
- 3/4 tsp pure vanilla extract
- Handful of chocolate chips for the "pieces" (optional)
Orange Buttermilk Cake

- 2 cups all-purpose flour
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs, at room temperature
- 1 cup sugar
- 1 cup buttermilk
- 1/2 teaspoon vanilla extract
- Zest of one orange (just a little over 1 tablespoon)
- 1/4 cup butter, melted and cooled to room temperature
- For the frosting
- 4 oz. cream cheese, softened
- 4 tablespoons butter, at room temperature
- 2 tablespoons orange marmalade
- 1 tablespoon fresh orange juice
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon orange extract
- 2 cups powdered sugar
