Heat oven to 350 degrees. In a large bowl combine all ingredients until moistened
- 3 cups flour
- 2 cups sugar
- 1 cup coconut
- 2 1/2 tsp. baking soda
- 1 tsp. salt
- 2 1/2 tsp. cinnamon
- 2 cups shredded carrot (4 medium)
- 1 1/4 cup oil
- 2 tsp. vanilla
- 1 tsp. grated orange peel (optional)
- 3 eggs
- 10 oz. can mandarine orange segments (undrained)
