Nam Yu Peanuts

- 3 12oz packages of peanuts, skin on
- 5-6 chunks (2 1/2 oz) fermented red bean curd
- 4 tablespoons water
- 1 teaspoon salt
- 3 teaspoons sugar
Braised Beef with Red Onions

Method 1. Heat oven to 160C/fan 140C/gas 3
- Ingredients
- 1.5 * 1.5kg braising steak , thickly sliced
- 500 * 500g red onions (about 3)
- 15 * 15g dried porcini mushrooms
- 3 * 3 tbsp olive oil
- 1 * 1 tbsp plain flour
- 425 * 425ml port
- 250 * 250g chestnut mushrooms , whole, or halved if large

To make the pastry, tip the flour, butter and sugar into a food processor with a pinch of salt

- 125 g plain flour
- 75 g unsalted butter , cold and
- diced
- 25 g caster sugar
- 1 egg yolk
- 1 egg white
- FILLING
- 2 heaped tbsp raspberry jam
- 150 g unsalted butter , at room
- temperature
- 150 g caster sugar
- 3 eggs , beaten
- egg yolk
- 150 g ground almonds
- lemon , zested
- 1 tbsp flaked almonds

- Ingredients
- 1.3 * 1.3kg piece pork belly , boned, rind left on and scored (ask your butcher to do this)
- 2 * 2 tsp sunflower oil
- 1 * 1 tsp white peppercorns , crushed
- 3 * 3 large onions , sliced
- 2-3 * 2-3 tbsp clear honey
- 2 * 2 tsp ground cumin
- 1 * 1 red chilli , deseeded and chopped

- • 1/4 c. peppery olive oil
- • one 15. oz cans cannelini, drained and rinsed (or cook your own)
- • juice of 1 Meyer lemon
- • 1/3 c. basil, chiffonade
- • 1 t. sea salt
- • 1/2 t. fresh ground black pepper

- 1 cup yellow cornmeal
- 1/4 cup sugar
- 2 tablespoons baking powder
- 2 teaspoons kosher salt

- 3 extra-large eggs, lightly beaten
