Bangkok Barbecued Chicken

- 4 large garlic cloves
- 1 large shallot, roughly chopped
- 1 one-inch piece of fresh ginger, roughly chopped
- 1 medium jalapeno, roughly chopped
- 1 large handful fresh basil
- 1/2 cup coconut milk
- 2 tablespoons fresh lime juice
- 1 tablespoon brown sugar
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1/2 teaspoon ground cumin
- 1 whole chicken, 4 to 5 pounds, cut into 6 serving pieces
Panettone chocolate pudding

I'm not much of a cake eater, so the panettone that inevitably turns up generally gets made into a pudding
- 150 g panettone, cut into 1-2 cm slices
- A good knob of butter, melted
- 3 whole eggs
- 6 egg yolks
- 60 g caster sugar
- 350 ml double cream
- 250 ml milk
- 2 tbsp good quality cocoa powder
- 100 g good quality dark chocolate, chopped into pieces 3-4tbsp melted marmalade, or apricot jam to glaze

- For the Panang curry paste:
- Ingredients
- 400 g beef sirloin, trimmed and thinly sliced into pieces 1-2 inches long, sealed in hot oil, leave to cool
- 3 tbsp Panang curry paste
- 100 ml sunflower oil
- 600 ml coconut cream
- 250 ml coconut milk
- 1 ½ tbsp palm sugar
- 1 tbsp white sugar
- 1 tbsp fish sauce
- Handful of Thai sweet basil
- 8 dried long red chillies, chopped and soaked in water
- 1 tsp of chopped coriander roots
- 1 tbsp chopped galangal
- 1 tbsp chopped lemongrass
- 2 tbsp chopped red shallot
- 1 tbsp chopped garlic
- ½ tsp of ground roasted cumin seed
- 1 tsp of roasted coriander seed
- Pinch of cracked black peppercorn
- ¼ nutmeg, coarsely pounded and roasted
- For the coconut rice:
- 200 g Thai jasmine rice
- 110 ml coconut milk
- For the son in law eggs (caramelised quail eggs):
- 8 quail eggs hardboiled and peeled
- 3 tbsp sunflower oil
- 1 tbsp of palm sugar
- 1 tbsp white sugar
- 1 tbsp fish sauce
- 1 tbsp of finely chopped shallots, deep fried
- For the cucumber and pomelo salad:
- 1 small cucumber
- 2 tbsp pomelo, peeled, segmented and flaked
- 3 red shallots, sliced
- 1 tbsp dried salted shrimp flakes (if available)
- For the lime and coriander dressing:
- 1 clove of garlic, crushed
- 1 tsp caster sugar
- 1 tbsp lime juice
- 1 tbsp lemon juice
- 1 tbsp light soy sauce
- 1 tsp rapeseed oil
- 1 long red chilli finely sliced
- Handful of coriander leaves
- For the garnish:
- Coriander leaves for garnish
- Handful of Thai sweet basil
- 1 long red chilli, finely sliced

- Ingredients
- 2 * 2 tbsp soy sauce
- * oil
- 2 * 2½ kg pork belly , off the bone
- 1 * 1 tbsp fennel seeds
- 1 * 1 tbsp coriander seeds
- 2 * 2 whole star anise
- 1 * 1 tsp root ginger , grated
- 3 * 3 ripe plums , quartered and stoned
- 1 * 1 small cinnamon stick
- 2 * 2 tbsp red wine vinegar
- 4 * 4 tbsp soft brown sugar
Minced Chicken with Pinenuts in Sesame Pockets

In a bowl, mix together minced chicken, ginger, garlic, soy sauce
- Chicken and marinade (quick marinade - about 30 minutes to 1 hour)
- 1 1/4 lbs boneless, skinless chicken thighs, minced (not ground up, but cut up into tiny pieces. This is the most time consuming portion.)
- 2 tablespoons finely chopped garlic
- 2 tablespoons finely chopped ginger
- 2 tablespoons Shao Xing Wine (or sake if you don't want to buy yet another ingredient)
- 1 tablespoons soy sauce
- Stir fry
- 2 tablespoons vegetable oil
- 3 stalks of celery, finely chopped
- 10 water chestnuts (either fresh or canned) finely chopped
- 2 tablespoons vegetable oil
- 2 tablespoons Shao Xing wine (or sake)
- 2 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/4 cup pinenuts
