- 150 g caster sugar
- 3 eggs , beaten

- 150 g ground almonds
- lemon , zested
- 1 tbsp flaked almonds
French Apple Cake

Preheat the oven to 350 F
- 3/4 cup all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 tsp. salt
- 6 cups apples (I recommend Fuji, golden delicious, Gala, or Pippin)
- 2 large eggs, at room temperature
- 3/4 cup sugar
- 3 tablespoons dark rum
- 1/2 teaspoon pure vanilla extract
- 1/4 tsp. ground cardamom
- 3/4 tsp. finely grated lemon zest
- 1/2 cup unsalted butter, melted and cooled

- 140 g butter , softened
- 140 g golden caster sugar
- 140 g self-raising flour
- 2 eggs
- 1 tsp vanilla extract
- 250 g raspberries
- 2 tbsp flaked almonds

- 1 * 1 red pepper , sliced

- 150 * 150g paella rice or long grain rice

- 400 * 400ml chicken stock
- 150 * 150g large cooked prawns , shell on or off
- 100 * 100g frozen peas , defrosted
- * a small bunch parsley , chopped
- * lemon wedges to serve
Ponzu-Glazed Chicken Sandwiches with Tomato Relish and Wasabi Mayonnaise

Place chicken in a plastic bag; pour in ponzu sauce and 1 tbsp (15 mL) peanut oil
- 4 skinless, boneless chicken breasts or 8 thighs
- ½ cup (125 mL) ponzu sauce
- 2 tbsp (25 mL) peanut or canola oil, divided
- 1 cup (250 mL) grape or cherry tomatoes
- ¼ cup (50 mL) finely chopped sweet onion
- 1 tbsp (15 mL) seasoned rice wine vinegar
- ½ tsp (2 mL) dark sesame oil
- 1 tbsp (15 mL) finely chopped fresh parsley ? cup (75 mL) mayonnaise
- 1 to 2 tsp (5 to 10 mL) prepared wasabi paste
- 4 large crusty sandwich rolls
- 4 romaine lettuce leaves
- ¼ cup (50 mL) crispy fried shallots
