- 284 * 284ml pot whipping cream
- 140 * 140g soft goat's cheese
- 2 * 2 handfuls rocket leaves, to serve

- 300 * 300g self-raising flour
- 300 * 300g light muscovado sugar
- 3 * 3 tsp mixed spice
- 2 * 2 tsp bicarbonate of soda

- 200 * 200g butter , melted
- * zest 1 orange
- 1 * 1 tbsp orange juice

Buckwheat Bread

In a large bowl, combine Xanthan Gum, baking powder, salt, flours, and flaxseed meal

- 1 Cup Vegetable Oil (Canola, etc)

- 2 Teaspoons Xanthan Gum
- 1.5 Tablespoons Baking Powder
- 1/2 Teaspoon Salt
- 1 1/2 Cups Light Buckwheat Flour
- 1/2 Cup Glutinous Rice Flour
- 1/4 Cup Tapioca Flour
- 1 Cup White Rice Flour
- 1/4 Cup Flaxseed Meal
- Cooking Spray for top

Butter the bread and cut each slice of buttered bread in half – leaving the crusts on

- approximately 2 oz (50 g) butter
- 1/2 oz (10 g) candied lemon or orange peel, finely chopped

- 10 fl oz (275 ml) milk

Banana Nut Bread

PREPARATION: Grease bottom of a 9x5x3-inch loaf pan
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup butter (1 stick), room temperature
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 large ripe bananas, mashed
- 1/2 cup chopped dried apricots or dates
- 1/2 cup chopped pecans or walnuts

- 1 medium onion, diced
- 1 cup strong brewed coffee
- 1/4 cup apple cider vinegar
