Cilantro Cranberry Vinaigrette

In blender, combine 1st 6 ingredients
- 1/4 c. brown rice vinegar
- 2 Tbs. balsamic vinegar
- 1-2 garlic cloves, minced
- 1/2 Tbs. fresh lemon juice
- 1/3 c. fresh cilantro leaves, chopped
- 1/4 c. dried cranberries
- 2/3 c. extra virgin olive oil
- Salt & pepper to taste
- Water dilute vinaigrette to taste
- In blender, combine 1st 6 ingredients. With blender still running, slowly add olive oil until well-blended. Add water, salt & pepper to taste.
Turkey Taco Panini

Spray one side of each flatbread with nonstick cooking spray
- 4 white or whole wheat foldable artisan flatbreads, such as Flatout® Foldit Flatbreads
- 1 1/2 cups shredded reduced-fat Monterey jack cheese with jalapeno peppers or reduced-fat Mexican-style four-cheese blend (6 ounces)
- 8 ounces shredded cooked turkey or chicken
- 1/2 cup black bean and corn salsa or fruit salsa
- 1/2 cup fresh cilantro leaves
Rhubarb Cobbler

Preheat oven to 350 degrees
- 4 c. chopped rhubarb
- 1 c. flour
- 3/4 c. old-fashioned oats
- 1 tsp. cinnamon
- 1 c. brown sugar
- 1/2 c. melted butter
- 1 c. sugar
- 1 c. water
- 3 Tb. cornstarch
- 1 tsp. vanilla extract
Corn Casserole with Three Cheese Blend

Heat oven to 375°F. Combine first 6 ingredients in medium bowl
- 2 eggs, beaten
- 1 can (15 oz.) cream-style corn
- 1 pkg. (10 oz.) frozen whole kernel corn
- 1 pkg. (8-1/2 oz.) corn muffin mix
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/8 tsp. ground red pepper (cayenne)
- 1 pkg. (8 oz.) KRAFT Shredded Three Cheese with a TOUCH OF PHILADELPHIA, divided
- 4 green onions, sliced
- 4 slices cooked OSCAR MAYER Bacon, crumbled
Smoky Roasted Corn Soup

Preheat the oven to 450 degrees
- 4 ears corn -- husked, kernels cut from cobs and cobs reserved
- 2 About 2 tbsp. olive oil
- Salt and pepper
- 3 tablespoons butter
- 1 russet potato, peeled and chopped
- 1 onion, chopped
- 1 jalapeno chile, chopped
- 1 small fresh red chile, such as finger or Fresno, chopped
- 2 tablespoons fresh thyme leaves
- 4 cloves garlic, chopped
- 1 teaspoon smoked paprika
- 4 cups vegetable stock or chicken stock
- 1/2 cup cream
- Chipotle hot sauce, such as chipotle Tabasco, thinly sliced scallions, chopped fresh parsley or cilantro, and radishes cut into matchsticks, for garnish

- 1/2 cup regular brown rice
- 1/4 cup water
- 2 tablespoons lime juice
- 1 tablespoon olive oil or cooking oil
