Spiced Oven-Fried Potatoes

Preheat a rimmed baking sheet in a 450 degrees F oven
- 3 large russet potatoes
- Salt
- 2 Tbs vegetable oil
- 1 sliced garlic clove
- 1 tsp ancho chile powder
- 1 tsp dried oregano
Whipped Potatoes with Horseradish

Brush an 8x8x2-inch or other 6-cup baking dish with 1 tablespoon melted butter
- 2 tablespoons unsalted butter, melted, divided, plus 1/2 cup (1 stick), cut into 1-inch cubes, room temperature
- 2 1/2 pounds russet potatoes, peeled, cut into 2-inch pieces
- Kosher salt
- 4 ounces cream cheese, cut into 1-inch cubes, room temperature
- 2 tablespoons prepared horseradish
- 2/3 cup whole milk, warmed
- Freshly ground black pepper
- 1 bunch scallions, white and pale-green parts only, minced (about 2/3 cup loosely packed)
- Hungarian sweet paprika
Chipotle Mole Tacos

In a bowl, mix the ancho and pasilla chiles and the hot coffee
- Mole:
- 2 ancho chiles, seeded
- 2 pasilla chiles, seeded
- 1 cup strong hot coffee
- 3 tablespoons tomato paste
- 1 (14-ounce) can chicken broth
- 1 tablespoon olive oil
- 1 chopped onion
- 4 garlic cloves, chopped
- 2 tablespoons golden raisins
- 1 tablespoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 2 tablespoons peanut butter
- 3 tablespoons chipotle hot sauce (recommended: Tabasco)
- 1 1/4 cups water, divided
- 2 ounces dark chocolate, chopped
- 2 tablespoons fresh lime juice
- Guacomole:
- 2 avocados, halved, pitted and peeled
- 1/2 red onion, finely diced
- 2 jalapeno peppers, seeded and finely diced
- 1 lime, zested and juiced
- 2 tablespoons freshly chopped cilantro leaves
- Chipotle Creme:
- 1/2 cup sour cream
- 1 tablespoon chipotle hot sauce (recommended: Tabasco)
- 4 pounds flat iron steak, room temperature just prior to cooking
- 4 tablespoons chipotle powder
- Salt and freshly ground black pepper

Margarita Chicken

- 2/3 cup chopped fresh cilantro
- 2 tablespoons coarse black pepper
- 2 teaspoons garlic powder
- 2 teaspoons onion salt
- 1/2 cup margarita mix
- 1/4 cup lime juice
- 1/4 cup orange juice
- 3 tablespoons tequila
- 3 tablespoons triple sec
- 2 tablespoons honey
- 1 cup light olive oil
- 6 skinless, boneless chicken breast halves
Smoked Paprika Egg Salad Sandwich

- 2/3 cup Hellmann’s Lite mayonnaise
- 2 tablespoons Hellmann’s Dijonnaise
- 1 tablespoon white wine vinegar
- 1 tablespoon smoked Spanish paprika (or sweet paprika)
- Salt and freshly ground black pepper
- 2 green onions (green and pale green part), thinly sliced
- 1 cup diced celery
- 3 tablespoons finely chopped flat-leaf parsley
- 8 hard cooked eggs, peeled and coarsely chopped
- 3 tablespoons olive oil
- 8 slices whole grain or whole wheat bread
- 1/2 small onion, thinly sliced
- Parsley leaves, for garnish (optional)
Chocolate Covered Brownie Ice Cream Sandwiches
