Cauliflower “Potato Salad”

Combine all ingredients in large bowl & refrigerate until chilled
- 1 whole cauliflower, steamed and florets chopped into chunks
- 6 slices turkey bacon or 6 slices smoked bacon, cooked crisp
- and crumbled
- 4 -5 scallions, chopped
- 1/2 cup fnely diced celery
- 4 hardboiled egg, peeled and chopped
- 1/3 cup regular mayonnaise
- 1/3 cup low-fat sour cream
- 1 tablespoon creole mustard
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
Grilled Corn Chowder with Peppers & Cilantro

Brush the 4 ears of corn, onion, bell pepper and potatoes with oil and sprinkle with salt and pepper
- 8 ears husked corn, 4 ears left whole and kernels cut from remaining ears and the cobs scraped to release juice
- 1 large onion, peeled and sliced very thick
- 1/2 Poblano pepper, stemmed and seeded
- 1 pound new potatoes, halved
- 1 1/2 Tbs. olive oil
- Salt and ground black pepper
- 4 slices bacon, chopped
- 1 tsp. dried thyme leaves
- 1 quart chicken broth
- 2 Tbs. chopped fresh cilantro, plus extra for garnish

- 2 T OLIVE OIL
- 1 SM MINCED ONION
- 1 1/4 C CORNMEAL
- 1 t SALT
- 1 T & 1/2 t CHILI POWDER
- 4 C BOILING WATER
- 2 1/2 C CHUNKY SALSA
- 1 1/2 SLOW COOKED PINTO BEANS OR A 15.5 OZ CAN OF PINTOS, RINSED & DRAINED
- 1 1/2 C FRESH OR FROZEN CORN KERNALS- THAWED
- 4 OZ. CAN DICED GREEN CHILIS, DRAINED
- 2 T MINCED RED ONIONS
- 2 T SLICED BLACK OLIVES
- SALT & PEPPER
- 2 T FRESH MINCED CILANTRO
