Pulse all of the ingredients in a food processor until combined
- 2 c mayonnaise
- 1 tbsp tequila
- 2 tbsp fresh lime juice
- 3 tbsp pickled jalapenos
- 1/4 c chopped fresh cilantro
- Kosher salt and freshly ground pepper

Preheat oven to 350 degrees
- 1 8- or 9-inch unbaked piecrust
- 1 cup semisweet chocolate chips
- 2 large eggs, lightly beaten
- 1 cup sugar
- 1/2 cup flour
- 8 tablespoons (1 stick) butter, melted and cooled
- 1 cup walnuts, coarsely ground
- 1 teaspoon vanilla extract
- Whipped cream for garnish, optional
Cheesy Black Bean Quesadilla

In bowl, toss together 1st 5 ingredients
- 2 Morningstar Farms Chipotle Black Bean Burgers, thawed & cut into 1/4 in. pieces
- 1/2 c. salsa
- 1/2 c. shredded Cheddar or Monterey Jack cheese
- 2 tsp. southwest or mexican seasoning
- 2 Tbs. chopped fresh cilantro
- 4 10-inch tortillas
- 1 Tbs. butter, melted
- 2 & 1/2 c. shredded lettuce
All Day Chipotle Pork Chili

Heat olive oil in skillet
- 1 Tbs. olive oil
- 1 &1/2 lbs. pork tenderloin, cut in 3/4 in. cubes
- 1 c. chopped onion
- 2 cloves garlic, minced
- 2 Poblano peppers, seeded & cut in 1/2 in. pieces
- 1 Jalapeno pepper, seeded & chopped
- 2 c. beef broth
- 1 c. chunky salsa
- 1-2 16 oz. can black beans, rinsed & drained
- 1 pkg. chili or taco seasoning mix
- Sour cream (optional)
- Fresh cilantro, chopped
Grilled Portabella Sandwiches with Chipotle Mayonnaise

Preheat grill. In small bowl, mix together the mayo & chipotle pepper; set aside
- 2 large portabella mushrooms, sliced 1/2 inch thick
- 2 TB. mayonnaise
- 1/4 tsp ground chipotle pepper
- 1/2 c. olive oil
- 2 tsp. minced garlic
- 1 tsp. parsley
- 1 tsp. seasoned salt
- 1/2 tsp. ground pepper
- 2 hamburger rolls
- 2 slices swiss cheese, optional

- 8 c. old-fashioned rolled oats
- 1 c. chopped almonds or walnuts
- 1 c. wheat germ
- 1 c. sunflower seeds
- 1/2 c. honey
- 1/2 c. vegetable oil
- 1/2 c. brown sugar
- 2 tsp. vanilla
- 1 &1/2 c. raisins, diced prunes or dried cranberries
- 1 Tbs. cinnamon

Preheat oven to 350F. Combine shortening, butter and brown sugar; beat until fluffy
- 1/2cup solid vegetable shortening
- 1/4cup butter
- 1cup packed brown sugar
- 1 egg
- 1/3cup molasses
- 2cups all-purpose flour
- 2teaspoons baking soda
- 1teaspoon salt
- 2teaspoons ground cinnamon
- 1teaspoon ground ginger
- 1/2teaspoon ground cloves (optional)
- Ice water
- 1/2cup granulated sugar

- 4 poblano chile peppers
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 cups fresh or frozen corn kernels (thawed if frozen)
- 2 cups heavy cream
- 1 teaspoon fresh thyme
- Kosher salt and freshly ground pepper
- 1/2 cup thinly sliced white onion
- 1 large zucchini, thinly sliced lengthwise
- 12 (7-by-3-inch) no-boil lasagna sheets
- 2 cups shredded Oaxaca or mozzarella cheese
