Creamy Enchiladas

HEAT oven to 350°F. MIX chicken, soup, 1 cup cheese, ½ cup sour cream and 3 Tbsp
- 2-1/2 cups chopped cooked chicken
- 1 can (10-3/4 oz.) condensed cream of chicken soup
- 1 pkg. (8 oz.) shredded Colby & Monterey Jack Cheese, divided
- 1 c sour cream, divided
- 1/4 c chopped cilantro, divided
- 12 flour tortillas (8 inch)
- 1-1/2 cups chunky Salsa
Bacon Avocado Egg Salad

In a large bowl combine eggs, avocado, bacon, mayo, dijon mustard, and seasonings and stir to combine
- 8 hard boiled eggs, roughly chopped
- 1 avocado, diced
- 3 strips bacon, cooked til almost crispy, roughly chopped
- 2-3 tablespoons chopped green onions
- 1/3 cup reduced fat mayo
- 3 tablespoons dijon mustard
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon cracked black pepper, or to taste
- juice of 1/4 lemon (about 2-3 teaspoons fresh lemon juice)
- optional: 1/2 teaspoon garlic powder, 1/4 teaspoon smoked paprika
- sliced bread or croissant, for serving
Bourbon Baked Beans

Put all ingredients in crock pot, cover & cook on high 2 hrs
- Homemade chili sauce:
- 4 cans Boston baked beans (16 oz. each)
- 16 oz. crushed pineapple, drained
- 12 oz. chili sauce (see recipe below)
- 1/2 c bourbon
- 1/4 c firmly packed brown sugar
- 1 tbsp. molasses
- 3/4 tsp. dry mustard or 1 Tbs. prepared mustard
- 1/2 c crumbled bacon
- 1/4 tsp garlic
- Chili powder
- 1/8 c. brown sugar
- 1 c. tomato sauce
- 2 Tbs. vinegar
- 1/4 tsp allspice
Sweet Potato Chocolate Chip Cookies

Preheat oven to 300°. In a large bowl, cream together the cooked sweet potato, butter, eggs, sugars and EXTRACTS
- 3/4 Cup mashed, cooked sweet potato (1 medium potato)
- 1 Cup butter, softened (2 sticks)
- 2 eggs
- 3/4 Cup sugar
- 3/4 Cup packed brown sugar
- 1 tsp. PURE VANILLA EXTRACT
- 1/2 tsp. LEMON EXTRACT
- 2 Cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- dash salt
- 1/4 tsp. PENZEYS CINNAMON
- 1 Cup semisweet chocolate chips
- 1 Cup chopped walnuts, optional
Double Chocolate Zucchini Bread with Pecans

- 1 medium zucchini
- 1/2 cup buttermilk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/4 cups all-purpose flour
- 3/4 cup sugar
- 1/4 cup cocoa
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

Jalapeño Popper Chicken Taquitos

Add chicken, ½ cup water, cream cheese, jalapeños, garlic powder, salt, and cumin to crockpot
- 3-4 chicken breasts, frozen or thawed
- 8 ounces cream cheese
- 1/3 cup jarred whole or sliced jalapeños, roughly chopped (or more, to taste)
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon cumin
- 16 taco-sized tortillas (I prefer flour but corn tortillas also work well)
- 1 1/2 cups shredded cheese (colby jack, monterey jack, Mexican blend, mozzarella - use your favorite!)
- optional toppings: fresh cilantro, additional jalapeños, dipping sauces such as ranch, salsa, green goddess

Hoisin Pork Roast-Crock Pot

Spray the slow cooker with cooking spray and add the pork roast

- 1 boneless pork loin roast (about 3 pounds), tied
- 1 10 ounce jar duck sauce or hoisin sauce (about 3/4 cup)
- 3 cloves garlic, smashed and peeled
- 2 tablespoons grated fresh ginger
- 1 tablespoon chili paste
- 1 tablespoon rice wine or rice wine vinegar
- 1 tablespoon soy sauce
- 2 teaspoons dark sesame oil
- 4 teaspoons cornstarch
- 2 scallions, white and light green parts only, thinly sliced on the diagonal

- 1 1/2 - 1 3/4 cups water
- 1 teaspoon chili powder
- 1/2 teaspoon salt

- 1 cup canned no-salt-added red kidney beans, rinsed and drained
- 1 1/2 cups shredded cooked chicken breast
