Chicken Parmesan

1. Preheat oven to 375 degrees
- 4 boneless, skinless chicken breasts
- 1 1/2 c. bread crumbs mixed with 1 tsp. tuscan sunset, italian herb, or pasta sprinkle (i used tuscan sunset)
- 1/2 c. grated parmesan cheese, divided
- 1 Tbsp oregano
- 1 Tbsp basil
- 1/2 tsp cayenne pepper
- 1/2 c. flour
- 2 eggs, lightly beaten
- 3 Tbsp olive oil
- 16 oz jar marinara sauce, divided (or one 15 oz. can of tomato sauce plus 1 tsp. tuscan sunset, italian herb or pasta sprinkle)
- 1 1/2 c. grated mozzarella cheese
- 8 oz dry pasta
Smoked Cheddar Cheese Tamales

Put the corn husks in a roasting pan of warm water; soak until softened, about 30 minutes
- * 40 dried corn husks (about 5 ounces)
- 4 cups masa harina (corn flour)
- 1/4 teaspoon baking soda
- 2 teaspoons sea salt
- 4 cups low-sodium chicken broth, warmed
- 1 cup lard or vegetable shortening, melted
- 6 poblano chile peppers
- 4 tablespoons unsalted butter
- 1 tablespoon vegetable oil
- 1 cup chopped white onion
- 1 cup chopped scallions
- 1/2 cup diced tomatoes
- 1 tablespoon apple cider vinegar
- Kosher salt and freshly ground pepper
- 1 pound smoked cheddar cheese, coarsely grated (about 4 cups)
- 1/2 pound Vermont white cheddar cheese, coarsely grated (about 2 cups)
- 1 cup sour cream
- 1 tablespoon grated lime zest
Salsa Roll-Ups

MIX Neufchatel and salsa until blended; spread onto tortillas
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
- 3 Tbsp. TACO BELL® Thick & Chunky Salsa
- 3 Tbs. minced black olives
- 4 flour tortillas (6 inch)
- 1/2 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese
- 1/4 tsp. chili powder
Pumpkin Streusel Muffins

Preheat oven to 375°. Cream together the butter and brown sugar
- Streusel Topping:
- 1/2 Cup butter, softened (1 stick)
- 1 Cup packed brown sugar
- 1 egg
- 1 Cup canned plain pumpkin
- 1/4 Cup evaporated milk
- 1 tsp. baking soda
- 1/2 tsp. SALT (Kathy likes KOSHER-STYLE FLAKE SALT)
- 11/4 tsp. CINNAMON (Kathy likes CHINA CINNAMON)
- 1/4 tsp. POWDERED GINGER
- 1/8 tsp. GROUND CLOVES
- 12/3 Cups flour
- 2 TB. flour
- 21/2 TB. white sugar
- 1 tsp. CINNAMON
- 1 TB. butter
Pancake Mix-Moriah's

May keep dry mix on hand & add liquid ingredients when ready to make pancakes
- Dry mix:
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 Tbs baking powder
- 1 tsp cinnamon
- 1/2-1 tsp apple pie spice
- Add:
- 1 Tbs vegetable oil
- 1 tsp vanilla
- 2 cups milk
- Chocolate chips (optional)
Italian Potatoes

Heat the butter on a cast-iron griddle or in large saute pan over medium-high
- 3 tablespoons butter
- 3 cloves garlic, smashed into a paste with the back of a chef's knife
- 1 small Spanish onion, halved and thinly sliced
- 1 small red bell pepper, diced
- 1 small yellow pepper, diced
- 1 1/2 pounds small new potatoes, par-cooked and diced
- 8 ounces Italian sausage, hot, mild or a combination, removed from the casing
- 1 teaspoon paprika
- Salt and freshly ground black pepper
- 1 tablespoon finely chopped fresh rosemary
- 2 tablespoons finely chopped fresh flat-leaf parsley
- 3 tablespoons olive oil
Spiced Cauliflower Soup

Combine cumin, coriander and fennel seeds in a small skillet over medium heat
- 3/4 teaspoon cumin seed
- 3/4 teaspoon coriander seed
- 1/2 teaspoon fennel seed
- 1 tablespoon extra-virgin olive oil
- 2 medium leeks, trimmed, washed and sliced (about 2 cups)
- 2 cloves garlic, minced
- 1 teaspoon minced or finely grated fresh ginger
- 1/2 teaspoon salt
- Pinch of cayenne pepper
- 1 medium head cauliflower (about 2 pounds), trimmed and broken into florets
- 4 cups low-sodium vegetable broth or low-sodium chicken broth
- 1/2 cup low-fat milk, as needed
- 1/2 lime
- 1/4 cup sliced almonds, toasted (see Tip)
- 2 tablespoons chopped fresh chives or cilantro
Whiskey Cream Sauce

Cook the onions in the 3 tablespoons butter in a skillet over medium heat for a few minutes
- 4 tablespoons butter
- 1/2 cup diced onions
- 1/2 cup whiskey
- 1/2 cup beef stock or broth
- Dash of salt
- Freshly ground black pepper
- 1/4 to 1/2 cup heavy cream
Oatmeal Cranberry Pancakes

Place first 6 ingredients into Vitamix in the order listed and secure lid
- 1 1/2 cups milk
- 3/4 cup whole wheat flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1/4 cup flax seed meal
- 3/4 cup uncooked rolled oats
- 1/4 cup dried cranberries
- 2 tbsp sunflower seeds
- 1 tsp cinnamon
Cilantro Orange Vinaigrette

Place all ingredients in blender & blend well, until cilantro is finely chopped & all ingredients are well-mixed
- 1/4 c. extra virgin olive oil
- 2 Tbs. balsamic vinegar
- Juice & zest from 1 large orange
- 1/4 c. orange juice
- 1 c. cilantro leaves
- 1 Tbs. brown mustard
