- 3/4cup plus 1 Tbsp mini chocolate chips, divided
- 1tablespoon chopped pistachios
- 1teaspoon powdered sugar

Poblano Rice

Heat 2 tablespoons oil in a medium, heavy nonstick skillet over medium heat
- 3 tablespoons vegetable oil, divided
- 1/2 medium white onion, chopped
- 2 poblano chiles, stemmed, seeded and chopped
- 1 clove garlic, peeled and roughly chopped
- 3/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup chicken broth, plus more if needed
- 1 cup long grain rice
Creamy Cauliflower

In saucepan, whisk first 5 ingredients over medium-high until smooth, 7 minutes
- 1 1/2 cups half-and-half
- 3 ounces grated Fontina
- 3 tablespoons Dijon mustard
- 2 tablespoons flour
- 1 1/2 tablespoons horseradish
- 6 cups cauliflower florets, steamed
- 2 tablespoons butter
- 3/4 cup panko
Grilled Italian Chicken Sandwich

Season chicken with Italian seasoning
- Italian Chicken Sandwich
- 12 ounces skinless, boneless chicken thighs, cut into thin strips
- 1 teaspoon dried Italian seasoning, crushed
- 2 teaspoons olive oil
- 3/4 cup green sweet pepper strips (1 medium)
- 3/4 cup red sweet pepper strips (1 medium)
- 3/4 cup thinly sliced onion (1 medium)
- 2/3 cup light roasted red pepper-and-garlic-flavored pasta sauce
- 4 rosemary-and-olive oil-flavored foldable flatbreads
- 1/2 cup shredded part-skim mozzarella cheese
- 1/4 cup coarsely chopped mild banana peppers
- 2 tablespoons snipped fresh basil
Pulled Pork

In a spice grinder combine all of the SPICES and grind them to your desired consistency
- Cup barbecue sauce (your favorite, or use the easy recipe below):
- 1 pork shoulder, 10-12 lbs.
- 3-5 fresh garlic cloves sliced thin
- 1 Cup tomato sauce
- 1-2 TB. cider vinegar
- 1-2 TB. honey
- 2 tsp. BBQ 3000
- 1 tsp. CRUSHED BROWN MUSTARD
- Spice Rub:
- 2 tsp. WHOLE CUMIN SEEDS
- 2 TB. KOSHER FLAKE SALT
- 2 tsp. EUROPEAN STYLE PEPPERCORNS (equal parts BLACK and WHITE PEPPERCORNS)
- 1 tsp. CHILI POWDER
- 1 tsp. WHOLE CORIANDER SEEDS
- 1 tsp. GARLIC SALT
- 2 * 2 TB. SMOKED SPANISH PAPRIKA
- 1 * 1 tsp. GROUND CHIPOTLE
- 2 * 2 TB. OREGANO

- 1 c. carrots, diced
- 1 c. celery, diced
- 2 Tbs. ginger root, minced

- 6 c. butternut squash, peeled & cut into large cubes
- 6.5 c. water
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 2 Tbs soy sauce
- 1 Tbs maple syrup
- Pinch pepper
- 2 Tbs chives or parsley
