Pumpkin Spice Granola

Preheat the oven to 300 degrees
- 1 (15 oz.) can solid pack pumpkin purée
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 2 Tbsp honey
- 1 tsp vanilla extract
- 2 tsp pumpkin pie spice
- 1/2 tsp salt
- 6 cups old fashioned rolled oats (not instant oats)
- 1/2 cup dried cranberries, chopped
- 1/2 cup raw, unsalted sunflower seeds
Bean Burritos

Preheat oven to 400 degrees F
- 2 teaspoons canola oil
- 1/2 cup thinly sliced green onions (4)
- 3 cloves garlic, minced
- 1 15 ounce can pinto beans, rinsed and drained
- 1 cup frozen whole kernel corn, thawed
- 1 cup cooked brown rice
- 1 cup chopped, seeded tomatoes
- 3 ounces Cotija or queso fresco cheese, crumbled, or reduced-fat Monterey Jack cheese, shredded (3/4 cup)
- 1 - 1 1/2 teaspoons finely chopped canned chipotle chile peppers in adobo sauce*
- 6 large burritos
- Butter-flavor nonstick cooking spray
- 1/3 cup light sour cream
- Sliced green onions (optional)
Crispy Cinnamon Oatmeal Cookies

Combine all ingredients in large bowl & beat until it "balls up
- 3 &1/4 c. oatmeal (quick or old fashioned)
- 1 stick butter
- 1/2 c. shortening
- 1/2 c. chopped pecans
- 1 c. white sugar
- 1 c. dark brown sugar, packed
- 2 eggs
- 2 tsp. vanilla
- 1 tsp. salt
- 1 TB. cinnamon
- 1 Tb. baking soda
- 1 &1/2 c. flour (WW works well)
Portobella Fries

Mix 1 cup breadcrumbs, ¼ cup grated pecorino, 2 tablespoons chopped parsley and some salt and pepper in a bowl

Creamy Stuffed Chicken Roll-Ups

HEAT oven to 375ºF. POUND chicken to ¼-inch thickness; place, top-sides down, on work surface
- 4 small boneless skinless chicken breast halves (1 lb.)
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
- 3 green onions, thinly sliced
- 1 Tbsp. chopped fresh parsley
- 1 clove garlic, minced
- 1/3 c KRAFT Original Barbecue Sauce
- 3 Tbsp. apricot preserves
- 1/4 tsp. hot pepper sauce
- 4 slices OSCAR MAYER Bacon, cooked, chopped
Sun-Dried Tomato Dip

- 2 Cups (10 ounces) all purpose flour
- 3/4 cup (3.75 ounces) coco powder
- 2 cups (14.5 ounces) granulated sugar
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. kosher salt
- 2 eggs
- 1/2 cup super strong coffee
- 1/2 cup Jack Daniels Whiskey
- 1 cup buttermilk
- 1/2 cup vegetable oil
- Dark Chocolate Whiskey Ganache
- 16 ounces good quality dark chocolate 65-72 %, chopped into small pieces 1/4 inch or less.
- 3/4 cup heavy cream
- 2 Tbsp. unsalted butter, softened
- 1/4 cup Jack Daniels Whiskey
- Dark Chocolate Whiskey Buttercream
- 1 lb. unsalted butter, softened
- 1- 3 ounce package white chocolate, vanilla or cheesecake instant pudding mix
- 2 cups Dark Chocolate Whiskey ganache
- 1/2 cup sifted dark cocoa powder
- 1/2 cup heavy cream
- 1/2 cup powdered sugar
- more whiskey to taste
Homemade Apple Fritters

Mix all dry ingredients together, slowly add the wet ingredients minus the apple
- 1 heaping cup AP flour
- 1/3 cup sugar
- 2 tsp. baking soda
- dash salt
- 1 – 2 tsp. cinnamon (depending on how much you love cinnamon)
- 1/4 tsp. nutmeg
- 1/2 tsp. vanilla
- 1 T. butter, melted
- 1 egg
- 1/3 cup milk
- 1 – 1 1/2 cups chopped apple, your favorite kind for eating, peanut sized or smaller
- oil for frying
- milk and powdered sugar glaze for dipping or just powdered sugar for dusting
- (About 1 cup pwd. sugar + 1 T. milk or more)
