Chiles Rellenos Casserole

1. Preheat oven to 450 degrees F
- 2 large fresh poblano chile peppers or fresh Anaheim chile peppers (8 ounces)
- 4 ounces Monterey Jack cheese with jalapeno chile peppers, shredded, or shredded Mexican-style four-cheese blend (1-1/2 cups)
- 2 ounces crumbled Cotija cheese (1/2 cup)
- 3 eggs, lightly beaten
- 1/4 cup milk
- 1/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon salt
Cauliflower Crust Pizza

Place a pizza stone in the oven, or baking sheet if you don’t have a pizza stone
- 1 head (Small Head) Cauliflower
- 1/4 cups Parmesan Cheese
- 1/4 cups Mozzarella Cheese
- 1/4 teaspoons Kosher Salt
- 1/2 teaspoons Dried Basil
- 1/2 teaspoons Dried Oregano
- 1/2 teaspoons Garlic Powder
- Red Pepper Flakes (optional)
- 1 Tablespoon Almond Meal (optional)
- 1 whole Egg
Buffalo Chicken Tenders (Healthy)

In a medium bowl, combine the garlic, salt, 2 tablespoons of the hot sauce and 2 cups of the buttermilk
- 2 garlic cloves, smashed
- 1 teaspoon salt
- 1/4 cup plus 2 tablespoons hot sauce (my favorite for this recipe is Tabasco Chipotle), divided
- 2 cups plus 6 tablespoons buttermilk, divided
- 1 pound chicken tenders (or chicken breasts cut into 3-by-1-inch strips, 1/2-inch thick)
- 3/4 cup whole-wheat Italian seasoned breadcrumbs
- 1/4 cup panko breadcrumbs
- 1/4 cup low-fat mayonnaise
- 1/4 cup crumbled blue cheese
- 1/2 teaspoon lemon juice
Key West Grilled Chicken

In a small bowl combine soy sauce, honey, vegetable oil, lime juice, and garlic

- 1 tablespoon vegetable oil
- Juice of 1 Lime
- 1 teaspoon minced garlic

Grilled Avocado & Shrimp Salad

Marinade: Put all the ingredients in a medium bowl and whisk until smooth
- Marinade:
- 1 1/2 tablespoons achiote paste*, crumbled or 1 tablespoon smoked paprika
- 1 orange, juiced
- 2 limes, juiced
- 1 medium garlic clove, peeled and minced
- 3/4 cup extra-virgin olive oil
- Pinch sea salt and freshly ground black pepper
- Scallops:
- 12 medium shrimp
- Extra-virgin olive oil
- Caramelized Avocados:
- Extra-virgin olive oil, for greasing pan
- 2 Hass avocados, halved, pitted and flesh cut into quarters
- 2 tablespoons sugar
- Sea salt and freshly ground black pepper
- Salad:
- 6 cups mixed baby lettuces
- 1 red grapefruit, peeled and segmented
- Achiote paste can be found in Latin markets. Look for a brand with no MSG or artificial additives.
Sauerkraut Supper

Fry bacon and sausage until crisp, drain
- 3 strips bacon, cut into small pieces
- 1 to 2 lbs. Polish sausage, cut into pieces
- 1 &1/2 tbsp. flour
- 2 cans sauerkraut (27 oz. each)
- 2 sm. potatoes, cubed
- 2 sm. apples, cored and cubed
- 3 tbsp. brown sugar
- 1 &1/2 tsp. caraway seeds
- 1/2 c. water
