Chicken or Beef Gravy-Easy

Melt the butter, then add the flour and blend thoroughly
- 3 tbsp. butter
- 4 tbsp. flour
- 2 cups chicken or beef broth
- 1/4 tsp. pepper
Sesame Pasta Salad

Combine pasta & vegetables
- Sesame Vinaigrette:
- 3 c. cooked spaghetti pasta
- 1 c. sliced fresh mushrooms
- 1 c. bean sprouts
- 2 Tbs sliced green onions
- 3 Tbs chopped parsley
- 1/2 c. sliced green pepper
- 2 tsp toasted sesame seeds
- 2 Tbs soy sauce
- 1 Tbs dark sesame oil
- 1 Tbs balsamic
- 1 Tbs water
- 2 tsp sugar
- 1 clove garlic, minced
Avocado Citrus Salad Dressing

Slice avocado in half and remove pit
- 1 whole Avocado
- 1/2 whole Jalapeno
- 1/4 cups Apple Cider Vinegar
- 1/4 cups Honey
- 3 Tablespoons Fresh Lime Juice
- 1 clove Garlic
- 1/4 cups Cilantro
- 1/4 cups Water For Thinning
- 1/4 teaspoons Salt
- 1 pinch Black Pepper
Stilton Sauce

Place the stilton cheese in the bowl of a food processor fitted with a steel blade and blend until finely minced
- 4 ounces stilton cheese, crumbled
- 8 ounces cream cheese, at room temperature
- 1/2 cup good mayonnaise
- 1/2 cup sour cream
- 1 tablespoon chopped scallions, white and green parts
- Kosher salt and freshly ground black pepper
- 1/4 teaspoon Worcestershire sauce
General Tso's Cauliflower

Toss the cauliflower with the corn flour, salt and pepper
- 1/2 head organic cauliflower, rinsed and cut into florets
- 1/3 cup organic corn flour
- salt, to taste
- crushed black pepper, to taste
- 3 cups or enough sunflower / coconut oil for deep frying
- 1 tbsp grapeseed oil
- 4 cloves garlic, minced
- 1 tsp grated ginger
- 1 1/2 tbsp crushed red chillies
- 1/4 cup brown sugar
- 1 tsp shaohsing wine / Chinese cooking wine
- 1 tsp soy sauce
- 1 tsp rice wine vinegar
- 2 tbsp organic ketchup
- 1/4 cup chopped scallion, for garnish
Zucchini and Corn Tortitas with Salsa-Cilantro Sauce

To make the tortitas: Coarsely shred zucchini
- For the tortitas:
- 1 large zucchini (8 ounces)
- 2 eggs, lightly beaten
- 1 1/2 cups shredded Chihauhau, asadero or Monterey Jack cheese
- 2/3 cup all-purpose flour
- 1/3 cup chopped green onions
- 2 teaspoons cumin seeds, crushed
- 1 teaspoon dried Mexican oregano or regular dried oregano, crushed
- 1/2 teaspoon salt
- 1 cup fresh or frozen whole kernal corn
- 2 to 4 tablespoons vegetable oil
- For the sauce:
- Salsa
- 1/4 cup fresh cilantro, chopped
- a few pinches of sugar, to taste
Chicken Taco Salad

Preheat the oven to 375 degrees F
- 2 8-inch flour tortillas, quartered and sliced into strips
- 2 tablespoons vegetable oil
- 1 1/4 teaspoons grated lime zest, plus the juice of 2 limes
- Kosher salt and freshly ground pepper
- 1 15-ounce can black beans, drained and rinsed
- 1 cup frozen fire-roasted corn, thawed
- 2 tomatoes, chopped
- 1 tablespoon chopped pickled jalapenos, plus 2 tablespoons brine
- 1/2 head iceberg lettuce, shredded (about 8 cups)
- 2 cups shredded rotisserie chicken (skin removed; about 10 ounces)
- 1 small avocado, chopped
- 1 cup grated sharp cheddar cheese (about 4 ounces)

- 2 limes, juiced (about 1/4 cup)
- 1/4 cup olive oil
- 2 heaping tbsp. sesame seeds
- 1 tablespoon (a scant palmful) each ground coriander and cumin
- 1 tablespoon light agave syrup or 2 tsp. acacia honey
- 1 1/2 teaspoons (about 1/2 palmful) each granulated garlic and granulated onion
- 1 teaspoon (about 1/3 palmful) dried oregano, preferably Mexican, lightly crushed
- Salt and pepper
- 6 boneless, skinless chicken thighs, or 3 boneless, skinless chicken breasts halved horizontally
