Jalapeno Ranch Dressing

Blend ranch dressing, cilantro, jalapeno pepper, tomato, and avocado in a blender until smooth
- 3 cups ranch salad dressing (such as Hidden Valley® Original Ranch®)
- 1 tablespoon cilantro leaves, minced
- 1/4 cup pickled jalapeno pepper, chopped
- 1 tomato, chopped
- 1 avocado - peeled, pitted, and chopped
Mexican Quinoa (One pan)

Heat olive oil in a large skillet over medium high heat
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 jalapeno, minced
- 1 cup quinoa
- 1 cup vegetable broth
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (14.5 oz) can fire-roasted diced tomatoes
- 1 cup corn kernels
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Kosher salt and freshly ground black pepper, to taste
- 1 avocado, halved, seeded, peeled and diced
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro leaves
Cheese & Bacon Jalapeno Rellenos

1) HEAT oven to 375°F. COMBINE all ingredients except peppers; spoon into peppers
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
- 1 cup KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA
- 4 slices OSCAR MAYER Bacon, cooked, crumbled
- 2 Tbsp. finely chopped onions
- 2 Tbsp. chopped fresh cilantro
- 1 clove garlic, minced
- 1 tsp. lime juice
- 18 jalapeño peppers, cut lengthwise in half, seeds and membranes removed
Mexican Sweet Potato Skins

Preheat oven to 350 degrees
- 3 medium sweet potatoes
- 1 can corn, rinsed and patted dry
- 1 can black beans, rinsed and drained
- 1/2 yellow onion, chopped
- 2 canned chipotle peppers in adobo sauce, minced or pureed
- 1 ounce light cream cheese
- 1/4 cup light sour cream
- 1 teaspoon salt (+ more to taste)
- 1/2 cup cilantro, roughly chopped
- 6 tablespoons shredded cheese (Pepperjack, Cheddar, Colby Jack… anything will work)

- 4 small chicken breasts
- Flour
- 4 beaten eggs
- 1 Tbs Sriracha
- 1 Tbs water
- Panko crumbs

Mix ingredients in bread machine & let rise until doubled in size
- 1 cup buttermilk
- 1/8 teaspoon baking soda
- 1 tablespoon active dry yeast
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/2 cup warm water (100F to 110F)
- 3 to 3 1/4 cup all-purpose flour
- 1/2 cup shortening
Lime Cream Cheese Pound Cake

Preheat oven to 325F. Grease a 12-cup Bundt pan
- Cake:
- 1 1/2 cups (3 sticks) unsalted butter, at room temperature
- 1 (8-ounce) block cream cheese, at room temperature
- 3 cups sugar
- 6 large eggs, at room temperature
- 3 cups all-purpose flour, sifted
- 1/4 teaspoon salt
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- Finely grated rind and juice of 1 lime
- Lime Glaze:
- 1/4 cup (1/2 stick) butter
- 1/4 cup sugar
- 3 tablespoons lime juice
- 1/4 cup powdered sugar, optional for garnish
Chinese BBQ Chicken Skewers - Recipes at Penzeys Spices

Cut the chicken pieces into long thin strips, 3-4 strips per piece
- 1 lb. boneless, skinless chicken breasts or thighs
- 3 TB. soy sauce (we used reduced sodium)
- 1/4 tsp. POWDERED GINGER
- 1/2 Cup hoisin sauce (sold next to the soy sauce-lower sodium is good if you can find it!)
- 1/2 tsp. GROUND WHITE PEPPER
- 1 clove garlic, minced or grated (or 1/4 tsp. PENZEYS MINCED GARLIC)
- 16-24 long wooden or metal skewers (if wooden, soak in water until ready to use)

- 1 Thai chile or serrano chile, with seeds, minced, divided
- 1 pound ground chicken, preferably dark meat
- 1/2 cup minced shallots (about 2 large)
- 1/4 cup oyster sauce
- 1 tablespoon all-purpose flour
- 1 garlic clove, minced
- 3 tablespoons vegetable oil, divided
- 1 head Bibb or romaine lettuce, leaves separated
- Thinly sliced scallion (optional)
- Fish sauce and oyster sauce are available at Asian markets and some supermarkets.
Bacon Cheeseburgers with Kentucky Bourbon Sauce

- 2 slices bacon, cut into 1/2-inch wide strips
- 1 yellow onion, about 5 ounces, finely chopped (2/3 cup)
- 1 clove garlic, minced
- 1/4 cup bourbon
- 1 cup ketchup
- 1/4 cup water
- 3 tablespoons cider vinegar
- 3 tablespoons unsulfured molasses (not blackstrap)
- 2 tablespoons dark steak sauce
- 1 tablespoon spicy brown mustard
- 1 teaspoon liquid smoke
- 1/2 teaspoon hot pepper sauce
- 8 slices bacon
- 1 1/2 pounds ground chuck (80% lean)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 4 ounces smoked cheddar cheese, shredded or sliced
- 4 hamburger buns, split
- 4 leaves romaine lettuce
- 8 slices ripe tomato (1 large)
