Cranberry Pumpkin Bread

In a mixing bowl, cream butter and sugar
- 1 cup butter or margarine, softened
- 1 &1/2 cups white sugar
- 1 cup brown sugar
- 3 eggs
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 teaspoons ground cloves
- 1 1/2 teaspoons ground nutmeg
- 2/3 cup dried cranberries
- 1 (16 ounce) can solid pack pumpkin
Black Bean Cilantro Dip

In a small bowl, combine the black beans, cumin, chili powder, garlic powder and cayenne pepper and mix well
- 1 15-ounce can black beans, drained and rinsed
- 1 teaspoon cumin
- 3/4 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- 1-1/2 cups sour cream
- 1/2 cup chopped green onions (4 green onions)
- 1/2 cup chopped cilantro
Strawberry Jalapeno Appetizers

In bowl, mix cream cheese, preserves, cumin & cilantro together
- 10 jalapeno peppers
- 8 oz. cream cheese
- 1/2 c. strawberry preserves
- 1 Tbs. cumin
- 1/2 c. finely chopped cilantro
Spicy Asian-Chicken-Salad Lettuce Cups

Chocolate Chai Pudding

- 2 cups all-purpose biscuit baking mix
- 1/2 cup lemon-lime (7-UP or Sprite) soda
