Fajita-Stuffed Chicken

Heat the canola oil in a pan over high heat
- 2 Tablespoons canola oil (for veggies)
- 1 red pepper, diced
- 1 green pepper, diced
- 1 yellow pepper, diced
- 1 onion, diced
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 4 ounces cream cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced pepper jack cheese
- 3 thick boneless skinless chicken breasts
- 2 teaspoons salt
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 2 teaspoons garlic powder
- 3 Tablespoons canola oil (for chicken)
- Salsa, sour cream, and guacamole for serving
Rainbow Mashed Potatoes

- 1 # red potatoes, quartered with skin on
- 1/2 rutabaga, peeled & cut into small chunks
- 2 large carrots, peeled & cut into chunks

In a saucepan, heat oil over medium heat

- 1 large jalapeno pepper, seeded and diced finely
- 1 garlic clove, minced
- 4 ounces cream cheese, room temperature
- 1/4 cup sour cream

- 1 cup shredded Monterey Jack cheese
- 8 slider rolls, split in half
- 1 cup Panko breadcrumbs

- Filling:

- 1/4 c. granulated sugar
- 1 tbsp. cornstarch
- Pinch of salt
- 1 tbsp. lemon juice
- For turnovers:
- 1 egg white, beaten with 1 tbsp. water
