Roasted Zucchini and Yellow (Summer) Squash

- 2 tablespoons olive oil (plus extra for greasing pan)

Slow Cooker 3-Bean Chili

- 1 (20 ounce) package 93%-lean ground turkey

- 1 (16 ounce) can tomato sauce
- 1 (15.5 ounce) can pinto beans, rinsed and drained

- 1 (15 ounce) can reduced-sodium black beans, rinsed and drained

- 2 tablespoons butter
- Leftover prime rib, sliced thin
- 1 large Vidalia onion, sliced thinly
- 4 sandwich rolls, such as ciabatta or sourdough, split lengthwise and toasted
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 3 tablespoon prepared horseradish
- 1/4 cup baby arugula leaves
Spicy Cheddar Witch Fingers

In a food processor, grate the cheddar cheese
- 1/2 pound extra-sharp white cheddar cheese
- 6 tablespoons unsalted butter, softened
- 1 teaspoon kosher salt
- 1/2 teaspoon cayenne pepper
- 1 cup all-purpose flour
- 1 large egg yolk mixed with 1 tablespoon of water
- 36 sliced almonds (about 1/3 cup)
Seafood Nachos-Like Chi-Chi's

- 2 1/2 ounces butter
- 2 1/2 ounces flour
- 1 cup water
- 1 teaspoon lobster base
- 1 1/2 teaspoons garlic salt

- 2 1/2 teaspoons cumin
- 1 cup American cheese, grated

- 8 ounces tiny cooked shrimp, peeled
- 8 ounces imitation crabmeat
- 2 tablespoons diced jalapenos
- 1/2 cup sharp cheddar cheese, grated
- 1/2 cup monterey jack cheese, grated
- 1/4 cup green onion, sliced
- 1/2 cup salsa
- 1/2 cup sour cream
- 10 ounces tortilla chips, restaurant style

Grilled Asian Fusion Salmon

First, put all the ingredients together mentioned and create your glaze
- glaze:
- 2 coho salmon filets, 6-8 ounces each
- olive oil
- salt
- pepper
- 4 tbsps dijon
- 3 tbsps soy sauce
- 1 tbsp rice vinegar
- 1 tbsp finely ground ginger or ginger powder
- 1/4 tsp sesame seed oil
- 2 tbsp olive oil or vegetable oil
- 1 tsp garlic powder
- 3 tbsps light brown sugar
- 2 tbsps honey
- salt
- pepper
