Actrify Classic Crispy French Fries

A great healthy version of French Fries! 1 tablespoon oil with fresh potatoes, no oil cooking with frozen fries
- 2 medium-sized yellow-fleshed new potatoes, about 500 grams
- 1 tablespoon EVOO or duck fat
- salt to taste

- 1 1 12 filet from Tarini's, about 12 oz.
- 1 1 1 tsp. peppercorns (Sarawak recommended), crushed (use mortar and pestle)
- 1 1 1 tsp. EVOO
- 1/2 1/2 1/2 tbsp. unsalted butter
- 1 1 1 oz. cognac or brandy
- 2 2 2 tbsp. heavy cream or creme fraiche
Chicken****Greek Salad with Chicken and Creamy Feta Dressing

This is always very good for both
- DRESSING:
- 1/4 cup buttermilk
- 1/4 cup greek yogurt
- 1 tsp. red wine vinegar
- 1 tsp. dried oregano
- 1 tsp. dried dill weed
- 1 tablespoons minced fresh parsley
- 1/8 tsp. salt
- 1 clove minced garlic
- freshly ground pepper to taste
- 40 grams crumbled feta
- SALAD:
- 1 green onion, minced
- 4 cups shredded romaine or other lettuce of choice
- 10 cherry tomatoes, halved
- 1/4 sweet pepper, cut into strips
- 2 tbsp. thinly sliced red onion
- 2 small cucumbers, thinly sliced
- 3 or 4 peperoncini, sliced, optional
- 2 or 3 radishes, thinly sliced
- 8 oil-cured olives, pitted and halved
- 4 oz. cooked chicken or turkey breast, shredded
- 2 - 3 tablespoons fresh dill, if you have it, added with the lettuce
FRIED****Egg Tortilla with Cumin Yogurt Sauce

- 3 tablespoons greek yogurt
- Pinch of ground cumin
- juice of 1 key lime or equivalent regular lime
- Maldon salt
- 1 teaspoon extra-virgin olive oil
- 1 jalapeno, seeded and thinly sliced (I used half the first time, it could take a whole)
- 2 large eggs
- 1 corn tortilla
- 3 tablespoons light Tex-Mex cheese blend (20 grams)
- Chopped cilantro, for garnish

- 1 tablespoon plus 1/4 teaspoon salt
- 1/2 pound large shrimp peeled and deveined (1 got 11 shrimp out of about 10-12 ounces - the size is key, I think)
- 1/8 teaspoon sugar
- 1/8 teaspoon roasted and ground Sichuan peppercorns
- 1 tablespoon peanut or vegetable oil
- 1/2 tablespoon minced garlic
- 1/2 tablespoon minced ginger
- 1/2 teaspoon minced jalapeno chili with seeds or pinch of pepper flakes
- 3 green onions, sliced thinly on the diagonal.
ASIAN****Chicken Udon Soup

Very good for both and easy to throw together on the weekend then complete later in the week
- 3 - 4 oz fresh shiitake mushrooms
- 2 1/2 cups chicken broth
- 3 (1/4-inch) slices peeled fresh ginger
- 2 garlic cloves, crushed
- 2 green onions, cut into 2-inch pieces
- 1 star anise
- 4 ounces fresh udon noodles
- 1/2 tablespoon olive oil
- 1 teaspoon minced peeled fresh ginger
- 1 garlic clove, minced
- 2 1/2 tbsp. sake (rice wine) or sherry or dry white wine
- 3/4 cup shredded cooked chicken breast (about 2.5 ounces)
- 2 teaspoon lower-sodium soy sauce
- 1 teaspoon honey
- pinch kosher salt
- 2 tbsp. diagonally cut green onions
- 1 small carrot, peeled and sliced very thinly diagonally (we decided we'd leave this out altogether - texture issue)
- 1/2 cup snow peas
- 1 hardboiled egg, sliced or quartered
Blue Cheese-Onion Steak Bites

In a large skillet, saute onions and garlic in butter until softened
- SPREAD:
- 3 large onions, thinly sliced into rings
- 12 garlic cloves, minced
- 3 tablespoons butter
- 4 beef tenderloin steaks (6 ounces each)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 loaf (10-1/2 ounces) French bread baguette, cut into 1/4-inch slices
- 4 ounces cream cheese, softened
- 1 cup (4 ounces) crumbled blue cheese
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
EGG - Spinach Salad with Warm Bacon Dressing

FOR THE DRESSING: In a small jar, combine all dressing ingredients except the bacon fat

This is wonderful and easy too
- 1 large onion, quartered and thinly sliced
- 3 cloves garlic, thinly sliced
- 5 tablespoons olive oil
- 8 ounces diced pancetta or guanciale
- 1/2 cup dry white wine
- 1 pkg. Knoor Homestyle Stock (Chicken Flavour)
- sprigs of fresh rosemary and thyme plus a bay leaf, wrapped in a leek leaf freshly grated nutmeg to taste
- generous pinch of hot pepper flakes
- 1 14 oz. can tomatoes, or 1/2 of a 28 oz. can, drained and mashed up (be sure to drain the tomatoes, you don't want more than the juice that clings to the tomatoes)
- salt and freshly ground pepper to taste
- 14 oz. bucatini
- salted water
- 2 cups coarsely grated smoked caciocavallo cheese
- chopped fresh Italian parsley, to garnish
