GREENS****Michael Symon's Braised Greens With Smoky Bacon

Great for both, even Dan liked
- 4 servings
- 4 slices bacon, cut into lardons
- 2 tablespoons olive oil, or duck fat
- 2 garlic cloves (sliced)
- 2 shallots (sliced)
- 2 Fresno chilies or 1 Anaheim or jalapeno (seeded and sliced)
- 1 pound hearty braising greens (tough stems removed) kale, swiss chard, mustard or beet greens (I used kale and red chard)
- 1/4 cup sherry vinegar
- Kosher salt
- 1/4 cup wildflower honey
- Tabasco sauce, to serve, if desired
AVOCADO - Chili Lime Avocados

Halve avocados and remove pits Roll limes or heat in microwave for 10 seconds to get juices flowing
- 1 ripe avocado
- 1 lime
- 1/2 teaspoon sugar
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1 tablespoon extra virgin olive oil (EVOO)
- Chopped chives or cilantro for garnish (optional)
SALMON****Ginger Poached Salmon With Teriyaki Drizzling Sauce

Great for both, although one fillet between us would be enough
- 1 salmon fillet or steak, about 1" thick (PC Blue Menu Skin-On Atlantic Salmon Fillet)
- 1/2 (or more) cups water
- 2 tbsp. dry sherry, sake or white wine
- 1 tbsp. lemon juice
- 1 clove garlic, crushed
- 1 piece fresh ginger, bruised, each about 1/4" thick
- 1 piece lemongrass, bruised, if available
- 1/2 tbsp. soy sauce
- 1 1/2 tablespoons home-made Teriyaki Sauce, thinned to drizzling consistency with water to serve

FISH****Rice Cooker Fish and Rice

We both liked this very much and ate it all
- MARINADE:
- 2 servings
- 1/2 lb. sole, snapper, flounder or salmon (I used sole the first time and it was a little fishy tasting - Dan suggested Pollack or Haddock for next time)
- 1 tsp. minced garlic
- 1 tsp. minced ginger
- 1 green onion, sliced
- 1 tbsp. minced fresh cilantro or cilantro paste (if you remember it)
- 1 tsp. sesame oil
- 1 tbsp. rice vinegar
- 2/3 tbsp. oyster sauce
- 2/3 tbsp. sherry
- 1 pinch sugar
- freshly ground white pepper
- 1/2 tbsp. cornstarch
- RICE:
- 1/2 cup Jasmine Rice
- 1/2 cup + 1 tbsp. chicken broth
- pinch of sea salt
- pinch of red pepper flakes
- fried shallots and Japanese sesame/salt blend to serve

This was great for both. A shrimp preparation that I actually enjoy!
- 1 1/2 cups cannelini beans, rinsed and drained
- 2 tbsp. EVOO
- 6 oz. large shrimp, raw (frozen are fine)
- 2 cloves garlic, sliced or minced
- 1/4 teaspoon chili flakes
- 1/2 cup canned tomatoes, with a bit of the juice
- 1/4 fresh basil chiffonade
- 1 tablespoon lemon juice (plus zest if you remember)
- Salt and Pepper

- 8 - 12 servins
- 1 2-cup container of puréed 2% cottage cheese or ricotta cheese (or fromage blanc)
- 2 tbsp. heavy cream or crème fraîche or sour cream
- 1-2 tablespoons white wine or white wine vinegar
- 1-2 tablespoon good olive oil or walnut oil
- 1/2 - 1 garlic cloves, grated
- 1 small shallots, finely minced
- 1 to 2 Tbsp chopped parsley
- 1 to 2 Tbsp chopped chives
- 1 to 2 tbsp. chopped fresh tarragon (optional - haven't tried)
- salt and pepper to season
