CANNELLINI*****White Bean and Kale Stew

Very good for both
- 1/2 cup dried navy or Great Northern beans
- 2 cloves of garlic, whole
- 1 sprig of rosemary
- 2 ounces diced pancetta or bacon or combination
- 1 tbsp. EVOO
- 1/4 cup finely minced onion
- 2 cloves garlic, minced
- 1/4 cup diced carrot
- 2 cups chicken broth
- 2 sprigs fresh thyme
- 1 sprig fresh rosemary
- 3 cups chopped kale
- 1 piece Parmigiano-Reggiano rind
- 2 tsp. fresh lemon juice or sherry vinegar
- 2 tablespoons chopped fresh parsley
Roasted Zucchini and Pesto

Place a baking sheet on the middle rack of the oven
- 2 pounds zucchini, (4 medium) trimmed and cut into 1-inch chunks
- 1 tablespoon oil, olive, extra virgin
- 2 tablespoon pesto
- salt, to taste
- pepper, black ground, to taste
LENTIL****Tomato Lentil Soup - SLOW COOKER

This was very good for both and quick and easy
- 3 servings
- 1 tbsp. evoo
- 3 ounces turkey keilbasa, diced
- 6 tbsp. brown lentils
- 1/2 small onion, finely diced
- 1 small carrot, finely diced
- 1 stalk celery, finely diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tbsp. tomato paste
- few sprigs thyme
- 1 bay leaf
- 2 ounces shredded swiss chard or spinach
- 1/2 tbsp. red wine vinegar - DON'T leave this out
CREAMY****Creamy Buttermilk & Blue Cheese Dressing

21/06/15 - Nice and creamy, even considering the lack of fat
- 1/3 cup mayonnaise
- 1/3 cup buttermilk
- 1/3 cup greek yogurt
- 2 tablespoons tarragon or white vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/4 cup crumbled blue cheese (1 ounce)
HAKE-Pan-Fried Garlic and Peppered Hake Fillets

*Heat* the oil in a frying pan over a low heat
- 2 hake fillets (about 125g each)
- 1 teaspoon garlic granules
- 1/2 teaspoon black pepper
- a little flour
- 1 tablespoon EVOO
- parsley and lemon wedges to serve
WINGS****Pastrami Chicken Wings (ActiFry)

21/01/17 - These were very good, although still not what I'm seeking as far as heat level is concerned
- 1 1/4 pounds chicken wings, separated at joints (approximately 10 wings/20 pieces)
- 1 tablespoon olive oil
- 1/8 teaspoon white pepper
- 1/4 tablespoon freshly ground black pepper
- 1/4 tablespoon lemon pepper seasoning
- 3/4 tablespoon ground coriander
- 1/2 tablespoon smoked paprika
- 1 pinch cayenne pepper
- 1 teaspoon kosher salt
- 1 teaspoon all-purpose flour - See no need for this whatever
- Thousand Island or Russian Dressing for dipping was recommended but neither of us cared for that. Use blue cheese dip if you want a dip.
VINAIGRETTE****Thai Sweet Chili Dressing

- 1/4 cup sweet chili sauce (I used half sweet and half hot - VH brand [if using another brand, watch the heat])
- 2 tablespoons rice vinegar
- 2 tablespoons lite canned coconut milk
- 1/2 tablespoon Splenda brown
- 1 garlic clove, pressed or finely minced
- 1/2 tablespoon creamy peanut butter
- 1/2 teaspoon ginger
- 1 tablespoon lime juice, plus zest
- 1 teaspoon fish sauce
- salt and pepper to taste, if needed
