Actrify Classic Crispy French Fries

A great healthy version of French Fries! 1 tablespoon oil with fresh potatoes, no oil cooking with frozen fries.

04/02/17 - I doubled the recipe and did a kilo of potatoes because Andria was here. That didn't work as they didn't get crispy enough and several broke. I guess this just isn't a recipe for sharing!

Ingredients

  • 2 medium-sized yellow-fleshed new potatoes, about 500 grams
  • 1 tablespoon EVOO or duck fat
  • salt to taste

Step 1

Wash the potatoes (do not peel) and cut into fries of equal thickness, about 1/2" or less on all sides. For best finished results, cut some a bit smaller so that you'll get your extra-crispy ones and Dan's will not be overdone. Rinse fries thoroughly in water and allow to soak until about 1 hour before cooking, changing the water as needed; pour into a seive and drain well for about 1/2 hour. (Do NOT soak in salted water as it makes them soggy, which I found out the hard way)

Line a clean kitchen towel with paper towels and thoroughly dry the fries. Leave them wrapped in the towelling for about 1/2 hour before cooking.

Place the fries in the ActiFry pan and drizzle evenly with the oil. If using the duck fat, put it in the Actifry pan first then add the potatoes. Set the machine for 40 to 50 minutes, depending on the size of the fries, and cook until the fries are crisp, golden and cooked through. Season with salt during the last five or ten minutes.

Serve with a tablespoon of mayo mixed with a bit of sriracha mayo or Roasted Garlic Chipotle Mayo or plain mayo for dipping.
