GROUND****Southeast Asian Style Turkey Burgers

These were great for both, including the glaze
- Glaze
- 2 tablespoons soy sauce
- 2 1/2 teaspoons dry mustard
- 2 tablespoons kecap manis
- 2 teaspoons honey
- Burgers
- 1 pound ground turkey
- 2 tablespoons finely chopped fresh coriander (cilantro)
- 2 teaspoons natural creamy peanut butter, room temperature
- 2 teaspoons Thai fish sauce (available at Asian groceries) see note
- 1/2 teaspoon Thai Sriracha chile sauce (available at Asian groceries) see note (Try Asian-style Tabasco sauce)
- 1/2 teaspoon minced lemongrass (optional)
- 1/4 teaspoon grated lemon zest
- 1/4 teaspoon grated lime zest
- 1 teaspoon freshly squeezed lime juice
- 1/4 teaspoon freshly grated peeled ginger
- 1 small clove garlic, minced and mashed to a paste with 1/8 teaspoon kosher salt
- 1/2 teaspoon kosher salt
- 5 hamburger buns, toasted
- Mung bean, alfalfa, radish sprouts, or pea shoots
- Sliced scallions

SEAFOOD****Chili-Lime Shrimp Bowls

06/03/15-Good for both - the rice and shrimp portions
- For the Cilantro-Lime Rice:
- 1/2 rice-cooker cup basmati or jasmine white rice
- water as needed
- 1 teaspoon sesame oil
- pinch of salt
- juice (and zest) of 1/2 lime
- 2 Tablespoons chopped fresh cilantro
- For the Chili-Lime Shrimp:
- 1 tablespoon extra virgin olive oil
- 1 Tablespoon honey
- 1/4 to 1/2 teaspoon chili powder of choice
- juice of 1/2 lime
- salt and pepper
- 6-8 oz raw jumbo shrimp
SHRIMP****Quinoa & Bean Bowl with Warm Shrimp

- 3/4 cup (125 g) cooked quinoa
- 3/4 cup black beans, rinsed or thawed
- 1/2 cup corn, thawed
- 1/4 avocado, diced
- 8 - 10 cherry tomatoes, halved or quartered
- 1 tbsp fresh parsley or cilantro, chopped
- 1 small garlic clove, grated
- 1 1/2 tbsp olive oil
- salt and pepper to taste
- 1/4 to 1/2 lemon, juiced (I used one whole regular lime)
- For the Shrimp
- 10 large shrimp, thawed (tails removed for ease of eating)
- 1/2 tsp red pepper flakes (this is a good amount and the heat comes through, which is nice against the coolness of the salad itself)
- 1/2 tablespoon olive oil
- 1 garlic clove, minced
SALMON****Salmon Salad Sandwich Spread (Eating Well)

This was very good for both
- 8 oz. salmon, poached and flaked or 1 can of Cloverleaf salmon, drained and flaked
- 1/4 cup minced red onion or 2-3 green onions
- 1 stalk of celery, very finely minced
- 2 tablespoons lemon juice + zest
- 1 tablespoon extra-virgin olive oil
- freshly ground pepper
- 2 tablespoons chopped fresh dill
- 4 tablespoons low-fat cream cheese or whipped cream cheese or spreadable goat cheese
- rye or marble rye or hot dog rolls or slider buns, to serve
- 2 large leaves romaine, cut in half, if making a sandwich
Mediterranean Portobello Burger

Preheat grill to medium-high
- 1 clove garlic, minced
- 1/2 teaspoon kosher salt
- 2 tablespoons extra-virgin olive oil, divided
- 4 portobello mushroom caps, stems and gills removed
- 4 large slices country-style sourdough bread, cut in half
- 1/2 cup sliced jarred roasted red peppers
- 1/2 cup chopped tomato
- 1/4 cup crumbled reduced-fat feta cheese
- 2 tablespoons chopped pitted Kalamata olives
- 1 tablespoon red-wine vinegar
- 1/2 teaspoon dried oregano
- 2 cups loosely packed mixed baby salad greens
Chicken - Strawberry Spinach Mason Jar Salad with Citrus Poppyseed Dressing

Make dressing by whisking together all ingredients
- Serves: 2 mason jar salads
- Ingredients
- 6 Tablespoons citrus poppy seed dressing
- 1/4 cup red onion slices
- 1/2 cup cucumber slices
- 4 large strawberries, chopped
- 1/2 cup roasted asparagus, chopped
- 1/4 avocado, chopped
- 6-8 ounces grilled or baked skinless chicken breast
- 1 5 oz bag of spinach
- 2 Tablespoons sliced almonds, toasted
- Citrus Poppy Seed Dressing
- 1/2 cup fresh grapefruit juice
- 1 Tablespoon maple syrup
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground pepper
- 1 teaspoon dijon mustard
- 1 clove garlic, minced
- 1 teaspoon poppy seeds
- 1 1/2 Tablespoons olive oil
MUFFINS-Hazelnut, Orange and Yogurt Muffins

In small bowl, mix topping ingredients until well blended
- TOPPING
- 2 tablespoons Turbinado sugar
- 2 tablespoons roasted flaked hazelnuts
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg

- 1 cup all-purpose white flour
- 3/4 cup whole wheat pastry flour
- 1/2 cup granulated sugar

MUSHROOMS-Tomato & Bocconcini-Stuffed Mushrooms with Mixed Greens

1 Combine tomatoes, bocconcini, parsley, capers, oregano and anchovies in bowl
- 1 pint (475 mL) grape tomatoes, quartered
- 1 cup (250 mL) mini-bocconcini, halved
- 2 tbsp (30 mL) chopped fresh parsley
- 1 tbsp (15 mL) minced capers
- 1 tsp (5 mL) dried oregano
- 2 anchovy fi llets, minced or 1 tsp (5 mL) anchovy paste
- 1/4 cup (60 mL) seasoned dry bread crumbs
- 1 lb (500 g) portobello mushroom caps, about 10 (2 1/2 inches/6 cm in diameter)
- Pinch each of salt and freshly ground black pepper
- 2 tbsp (30 mL) extra virgin olive oil
- MIXED GREENS
- 8 cups (2 L) mixed greens
- 2 tbsp (30 mL) extra virgin olive oil
- 2 tbsp (30 mL) balsamic vinegar
