- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon minced garlic
- 1/2 tablespoon minced or picked whole fresh thyme leaves
- 1 tablespoon of Za'atar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2-3 tablespoons of good olive oil

1.Cook the edamame according to package directions
- 1 bag frozen edamame with shell (Costco)
- 1 1/2 tablespoons brown sugar or 1/2 tablespoon Splenda Brown
- 2 tablespoons soy sauce
- a pinch of crushed red chili fakes, optional
- 2 tablespoons water
- 1 teaspoon sesame oil (substitute with canola or vegetable oil)
- 1/4 teaspoon fresh grated ginger
- 1/4 teaspoon fresh grated garlic

- 2 cans Calipo Tuna in Olive Oil
- 2 tablespoons Red Onion (sliced thin)
- 1/4 cup mixed Bell Pepper, diced
- 1/2 medium jalapeno, seeded and sliced
- 1 Granny Smith Apple, cut in batons
- 1 rib Celery, diced
- 2 Scallions, thinly sliced
- 1 clove Garlic, minced
- 2 tablespoons Green Olives, chopped - oops forgot this the first time (tried them the second - I prefer it without)
- 2 tablespoons chopped Flat Leaf Parsley
- 1 1/2 tablespoons Olive Oil
- 1 tablespoon Red Wine Vinegar (or equivalent amount of basic red wine vinaigrette)
- Salt and Freshly Ground Pepper

- 1 tablespoon fresh lemon juice
- 1 large egg
- 3 cups chicken broth
- 1 tablespoon olive oil
- 1/2 cup finely chopped onion
- Dash of salt
- 6 oz. leftover cooked turkey, chicken or Cornish hen, shredded (light and dark meat)
- 1/2 cup cooked short-grain rice (I used brown basmati)
- 1/2 cup shredded romaine lettuce
- 1/4 cup sliced green onions
- 1 tablespoon chopped fresh dill
- 1/2 tablespoon fresh lemon juice
- salt and freshly ground black pepper

PREPARE VINAIGRETTE: Mix mustard and vinegar in a bowl or in small food processor
- MUSTARD VINAIGRETTE:
- 8 servings
- 1 PC organic Whole Chicken
- 2 tbsp. Dijon mustard
- 1 1/2 tbsp. white wine vinegar
- 6 tbsp. EVOO
- 1/3 cup shallot, finely minced
- 1 tbsp. finely minced fresh rosemary
- 1 tsp. finely minced fresh sage
- sea salt and freshly ground black pepper to taste
CARROTS****Maple Dijon Roasted Carrots

- 1 pound Costco baby carrots with tops, halved
- 1 tablespoon oil
- 1 tablespoon maple syrup
- 1/4 tablespoon grainy mustard
- 1/4 tablespoon dijon mustard
- 1/4 tablespoon white miso paste
- 1/4 tablespoon rice vinegar
- 1 teaspoon soy sauce or kecap manis
- 1 small clove garlic, grated
- 1 sprig each rosemary and thyme, removed before serving (forgot both)
- 1 tablespoon chopped fresh dill or parsley, to garnish (ditto)
MACARONI*****Macaroni au Gratin - Original Recipe, Five Roses Flour

* *Cook* macaroni according to package directions and drain
- 170 grams Catelli Smart Macaroni
- 1 tbsp. EVOO
- 1 tbsp. Becel
- 2 tbsp. flour
- 1 cup milk
- sea salt, pepper, dry mustard, grated nutmeg and cayenne to taste
- 2 1/2 ounces Kraft light cheddar
- 1 1/2 ounces goat cheese
- 1 1/2 ounces full fat cheese of choice - smoked cheddar, manchego, asiago, etc.
- 9 tbsp. Panko
- 3 tbsp. grated parmigiano reggiano
- 1 1/2 tsp. EVOO
- smoked paprika
GROUND****Meatballs a la Pizzaiola

These were very good, although I didn't get around to stuffing them with cheese or olives - they were good anyway,
- 6 servings
- Vegetable oil cooking spray
- 1 large shallot, peeled and chopped
- 2 cloves minced or grated garlic
- 2 tbsp. sun-dried tomato crumbles
- 2 tbsp. minced fresh parsley
- pinch each dried oregano and basil
- 1/4 cup (40 grams) Kraft Italiano 4 cheese light
- 20 grams grated Parmesan
- 1/2 tablespoon tomato paste
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoons kosher salt
- 1 lb. medium ground beef (or use 1/3 ground pork or turkey with the beef)
- 2 ounces smoked mozzarella, cut into 1/2-inch cubes (or try olives in some)
- 1 cup marinara sauce, warmed
