- 1 medium onion, chopped (1/2 cup)
- 1 medium zucchini, chopped (2 cups)
- 4 medium carrots, sliced (2 cups)
- 1 cup dried lentils (8 oz), sorted, rinsed
- 4 1/2 cups Progresso® chicken broth (from two 32-oz cartons)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup sliced fresh mushrooms (3 oz)
- 1 can (28 oz) Muir Glen® organic diced tomatoes, undrained
- 1/4 cup chopped fresh or 1 tablespoon dried basil leaves
- Shredded Parmesan cheese, if desired

- 16 baby artichokes, trimmed and halved or 12 large artichokes, trimmed to the heart and quartered
- 1/4 cup extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 4 medium cloves garlic, minced (1-1/2 Tbs.)
- 1 Tbs. fresh lemon juice
- 1/2 cup chopped fresh flat-leaf parsley (I used dried, what I had)
- 1/2 cup chopped fresh mint

- 2 servings
- 1 can Cloverleaf salmon, drained
- 1/4 cup finely minced fennel
- 1/4 cup finely minced onion
- 1 small carrot, minced
- 1 cup navy beans, rinsed and drained
- 2 tbsp. lemon juice
- 2 tbsp. Hellmann's Light
- 1 tsp. dried tarragon or chopped fresh dill
- salt and pepper
THIGHS****Braised Chicken with White Beans & Greens (Clinton Kelly)

- 4 skinless, boneless Chicken Thighs
- 4 prosciutto Slices; optional
- Extra-Virgin Olive Oil
- 1/2 Onion, thinly sliced
- 3 Garlic Cloves, smashed (put them in whole)
- 1 medium Rosemary Sprig, leaves finely chopped (I think thyme would be nice too)
- 1 pinch of hot pepper flakes
- 1/4 cup White Wine
- 1 cup Chicken Stock
- 1 cup Cannellini Beans, drained & rinsed (I used half Cannellini and half navy but either or would work)
- 1 1/2 cups Fresh Spinach, Swiss chard or kale (I used the pre-mixed baby kale, chard and spinach)
- 1/2 Lemon, zest & juice - nice touch, don't leave it out
- Parsley (to garnish)
- Salt
- Freshly Cracked Black Pepper
CHOPS****Slow Cooker Pepper Pork Chops (Alton Brown)

- FOR THE BRINE:
- 4 servings
- 1/4 cup chicken broth
- 1/2 tsp. kosher salt
- 2 tbsp. Splenda brown
- 1/2 tbsp. black peppercorns, slightly crushed
- 2 Boneless butterfly Chops, halved (about 10 ounces)
- FOR THE CHOPS:
- 1 oz. dried apple slices
- 1 tbsp. EVOO
- 1/2 large onion, thinly sliced
- 6 tbsp. chicken broth
- coarsely ground black pepper
- 2 - 3 sprigs fresh thyme
RAVIOLI*****Lobster Ravioli

Combine sauce ingredients in a small non-stick saucepan and heat gently until homogenized and hot
- 2 servings
- 1 pkg. Lobster ravioli from Tarinis - 12 pieces
- 1/2 bottle cherry tomato sauce (from Regency Bakery)
- 2 - 3 tbsp. Mascarpone, cream cheese or whipping cream
- pinch of dried tarragon
- pinch of hot pepper flakes
- salt and pepper to taste
- grated pecorino or parmigiano, to serve
- 2 teaspoons chopped fresh parsley, optional
FRIED****Scallion Pancakes - 2 Points

- 1 generous pinch of sea salt
- 1 teaspoon extra virgin olive oil
- 1 tablespoon sesame oil
- 1/4 cup boiling water
- 2 green onions, very finely minced
