1. Preheat oven to 450 degrees F
- 2 head(s) (about 2 pounds each) cauliflower, separated into 1-inch flowerets
- 2 medium red onions, each cut into 12 wedges
- 4 clove(s) garlic, peeled and crushed with side of chef's knife
- 2 tablespoon(s) olive oil
- 1 tablespoon(s) (chopped) fresh rosemary leaves
- 3/4 teaspoon(s) salt
- 1/4 teaspoon(s) coarsely ground black pepper
- 1/4 cup(s) (chopped) fresh parsley leaves

GROUND****Mini Buffalo Chicken Balls

Great for both. Would make good party fare, just make the balls a bit smaller
- 6 servings
- 4 tablespoons (1/2 stick) unsalted butter
- 1/3 cup Frank's Red Hot sauce or any other favorite hot sauce
- 1 pound ground chicken, preferably thigh meat
- 1 large egg or equivalent
- 1/2 celery stalk, minced
- 3/4 cup panko
- 1 teaspoon salt
SALSA****Black Bean, Corn & Avocado Salsa/Salad

Great for both as a salsa or a salad
- DRESSING:
- 1 cup black beans, rinsed and drained (thawed if frozen)
- 12 mixed cherry tomatoes, halved
- 1 clove garlic, minced
- 1/2 medium red or yellow pepper, diced
- 1 large or 2 small jalapeno peppers, seeded and minced or thinly sliced
- 2 green onions, minced
- 1/4 red onion, diced 1/4"
- 1 cup frozen corn, thawed
- 1 medium ripe but firm avocado, diced
- 2 tablespoons each chopped fresh cilantro and Italian parsley
- 100 grams light feta, diced
- 1/2 teaspoon ground cumin
- 1 teaspoon chili powder
- pinch of dried oregano
- 2 tablespoons extra virgin olive oil
- 2 teaspoons red wine vinegar
- 1 teaspoon liquid honey
- grated zest and juice of 1 or 2 limes
- Maldon salt and freshly ground pepper

SWEET POTATOES - Roasted Mashed Sweet Potatoes

1.Preheat oven to 350 degrees
- 2 good sized sweet potatoes, peeled and cut into large chunks (or 1 package PC baby sweet potatoes, 1 1/2 lbs. raw, unpeeled)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons white wine
- 1 teaspoon chopped fresh thyme (or 1/2 teaspoon dried thyme)
- 1 teaspoon salt
- A few grinds of black pepper
- freshly grated nutmeg to taste
- 1 tablespoon butter
- 1/4 cup silk almond milk

This was great for both, lovely chewy-type texture with a crisp buttery top and great flavour
- 16 servings
- 1-1/2 cups flour
- 1-1/2 tsp baking powder
- 1/2 teaspoon coarsely ground pepper
- 3 eggs, lightly beaten
- 1/2 cup plus 1 Tbsp butter, melted
- 2/3 cup olives, pitted and sliced (I used 6 garlic-stuffed green olives from Costco, with the garlic, and the remainder small French pitted black olives, halved)
- 4 ounces bacon, about 4 slices, cut into lardoons and fried
- 1 cup Grated Gruyere cheese or grated Parmesan - I've used Compte, yummy and a stout-infused cheddar, also yummy
- Pinch of Malden salt, to taste
- 1 tablespoon chopped fresh rosemary or 1 tsp. dried herbes d'Provence

PUMPKIN - Roasted Sugar Pumpkin with Garlic and Shallots

Preheat oven to 450. Toss everything together in a large bowl and lay out on a parchment-lined baking sheet
- 2 1/2 lb. sugar pumpkin, seeded and cut into 3/4" - 1" cubes
- 4 - 6 shallots, quartered or halved
- 6 - 10 cloves garlic, peeled and halved
- 3 tablespoons EVOO
- 1 sprig rosemary
- pinch each freshly grated nutmeg and ground cinnamon
- Maldon salt and freshly ground black pepper to taste
VEGGIE-Taco-Salad Wraps

With a potato masher or fork, mash together beans, olive oil, cumin, chili powder, and salt in a medium bowl
- 1 can (15 1/2 ounces) black beans, or red kidney beans, rinsed and drained
- 2 teaspoons olive oil
- 1 teaspoon ground cumin, or more to taste
- 1/4 teaspoon chili powder
- 1/2 teaspoon salt
- 6 flour tortillas, (10 inches in diameter)
- 3 plum tomatoes, seeded and cut into 1/4-inch dice (about 1/2 cup)
- 1 cup shredded cheddar cheese
- 6 large green-leaf lettuce leaves
- 1 avocado, cut into 1/4-inch dice, for serving (optional)
- 1 mango, cut into 1/4-inch dice, for serving (optional)
