This was good and worth a re-try but note the tweaks
- For the Chicken:
- 2 Boneless skin-on Chicken Thighs (pounded out and marinated) - n.b. use thighs - I didn't have them and I used chicken fingers instead, which I pounded and which fell apart in the marinade
- Salt and Pepper
- 2 tablespoons Extra Virgin Olive Oil
- 3 cups Arugula
- 2 tablespoons Orange Juice
- 1/2 teaspoon Dijon Mustard
- 1 teaspoon Black Olive Paste
- 2 tablespoons Sun-dried Tomatoes (packed in oil)
- 1/2 tablespoon Olive oil
- For the Marinade:
- Parsley
- Thyme
- Rosemary
- 1 - 2 tablespoons Apple Cider (or apple juice)
- 2 tablespoons Extra Virgin Olive Oil

- Salt
- 2 six-ounce boneless skinless Chicken Breast cutlets
- freshly ground Black Pepper
- 2 slices imported Italian Prosciutto (cut in half)
- 1 tablespoon Extra Virgin Olive Oil
- 1 tablespoon Butter
- All-Purpose Flour for dredging
- 2 peeled cloves Garlic
- 1/4 cup dry White Wine
- 1/3 about 1/3 cup hot Chicken Stock
- 1/4 cup canned Italian Plum Tomatoes (preferably San Marzano; seeded and chopped)
- 4 fresh Basil Leaves
- 2 ounces shredded Italian Fontina cheese
- 2 tbsp. grated Grana Padano
- 1 tablespoon Tomato Sauce or liquid from the canned tomatoes

- 3 bunches kale (ends removed and leaves roughly chopped)

- 6 tablespoons Light Thousand Island Dressing (See Recipe) or 6 tablespoons homemade light Italian dressing mixed with 4 tablespoons 2% Greek yogurt
- 14 cherry tomatoes, halved
- 2 baby cucumbers, sliced and halved, or 1/2 to 2/3 cup small broccoli florets, raw
- 1/4 cup red onion, diced
- 60 grams Kraft Shredded Tex-Mex Light - the cheese is hard to pick up with a fork this way - use cubed cheddar instead next time
- 100 grams PC Fire-Roasted Sirloin Beef Strips
- 1/2 avocado, diced
- 4 cups spinach/arugula blend
- fresh cilantro, parsley or basil, if available

- 1 corn tortilla
- 1 teaspoon olive oil
- 1 egg
- 3 - 4 tablespoons my Spicy Red Mexican Sauce or red or green salsa of choice (in a pinch)
- 30 grams Kraft Tex Mex Light or 30 grams Tre Stelle Light Feta cheese
- chopped fresh cilantro
- 1/4 ripe avocado, diced
- 1/4 cup heated black beans (Optional)
FARO - Baked Faro with Pancetta and Herbs

Soak faro for an hour or so in cold water prior to proceeding with recipe
- 1 ounce pancetta or bacon, chopped
- 1/4 cup finely chopped onion
- 2 tbsp. finely chopped carrot
- 2 tbsp. finely chopped celery
- 1 clove garlic, chopped
- 1/2 cup faro (hulled spelt berries), washed
- 3/4 cup low-sodium chicken broth
- 2 tbsp. Madeira wine
- 1 tablespoons chopped fresh sage

- 1 sprig fresh thyme
- 1 sprig fresh marjoram

Melt the duck fat in a soup pot and add the garlic, cooking for two minutes
- 2 heaping spoonfuls of goose fat or duck fat (she used a mixture of duck fat and bacon fat)
- 6 cloves garlic, minced
- 1 bay leaf
- A handful of chopped fresh thyme
- 3 cups chicken stock
- Salt and pepper
- 2 slices of day-old baguette or other bread, toasted
- Grated Comté or gruyere cheese, for serving
- Chopped parsley, for serving

- Raspberry Basil Vinaigrette:
- 4 ounces chopped poached chicken breast
- 2 baby cucumbers, diced
- 14 cherry tomatoes, halved
- 1 medium jalapeno, seeded and cut into half-rings (my addition)
- 1 hard-boiled egg, chopped
- 1/4 cup fresh raspberries
- 2 strips of bacon, crispy, diced
- 3 cups fresh spinach
- 1 cup fresh or frozen and thawed raspberries
- 2 tablespoons cold water
- 2 tablespoons basil leaves, packed (if you have a high-powered blender you can leave the stems on)
- 1 tablespoon honey
- 2 tablespoons almond, walnut or hazlenut oil
- 1 tablespoon balsamic vinegar (or more to taste)
- sea salt and freshly ground black pepper, to taste
