TURKEY****Turkey Chowder with Wild Rice, Crimini, and Pancetta

- 3 3 3 ounces wild rice
- 2 2 2 ounces Lundberg Wild Blend
- 1 1 1 tablespoon olive oil
- 150 150 150 grams Pancetta, diced (use the PC brand pre-diced for this)
- 12 12 12 ounces cremini mushrooms, sliced
- 1/4 1/4 1/2 cup ( 1/2 stick) butter
- 2 2 2 carrots, diced
- 2 2 2 celery stalks, chopped
- 1 1 1 red pepper, diced
- 1 1 1 large or two small jalapenos, seeded and minced
- 1 1 1 large onion, diced
- 1 1 1 leek, quartered and thinly sliced
- 1/4 1/4 1/4 cup chopped shallots
- 2 2 2 cloves garlic, minced
- 1/3 1/3 1/3 cup all purpose flour
- 10 10 10 cups Turkey or Chicken Stock, including a Knoor cube and/or leftover gravy, if desired
- 1 1 1 teaspoon dried crushed rosemary or 1 tablespoon fresh
- 1 1/2 1 1/2 1/2 cups frozen corn kernels
- 1/2 1/2 1/2 cup heavy whipping cream
- 1/4 1/4 1/4 cup chopped fresh Italian parsley
Potato soup with apples and brie cheese - Mayo Clinic

Instead of heavy cream, this potato soup uses fat-free evaporated milk for its creamy base
- o 1 cup chopped yellow onion
- o 1/4 cup sliced leeks (whites only)
- o 4 large Granny Smith apples, cored, peeled and quartered, plus 1 Granny Smith apple, cored and sliced thinly, for garnish
- o 2 cups reduced-sodium chicken broth
- o 1 bay leaf
- o 1/2 teaspoon salt
- o 1/4 teaspoon dried thyme
- o 3 cups fat-free evaporated milk
- o 6 small potatoes, peeled and sliced
- o 4 ounces brie cheese, cut into small cubes
CHICKEN****Creamy Greek Salad Sandwich Wraps with Chicken or Turkey

- 1/2 cup cucumber, cut into 1/2-inch dice
- 1/4 cup red bell pepper cut into 1/2-inch dice
- 8 cherry tomatoes, halved or quartered
- 2 tablespoons red onion or shallot, thinly sliced or minced
- 6 oil cured black or kalamata olives, coarsely chopped or a tablespoon of my homemade tapenade (easier)
- 1/2 cup finely diced cooked chicken or turkey (2 ounces)
- 1 1/2 oz. crumbled or diced light feta cheese
- 1/3 cup homemade Tzatziki sauce
- 1 individual container hummus, divided
- lettuce or greens to line tortilla
- 3 large whole wheat tortillas
BROCCOLETTE*****Pan-Roasted Broccolette with Garlic and Red Pepper Flakes

- 1 large bunch broccolette, rinsed
- 1 tablespoon Extra virgin olive oil
- salt and freshly ground black pepper, to taste
- 1 large garlic clove, thinly sliced
- 1/4 teaspoon red pepper flakes
- 1/4 cup of chicken broth
OIL - Orange Chili Oil

* Add the thyme, rosemary, chili flakes and orange peel to the oil in a clean glass jar
- 12 servings, 1 tablespoon each
- 2 sprigs fresh thyme, leaves chopped
- 1 sprig fresh rosemary, leaves chopped
- 3/4 tablespoons dried red chili flakes
- 3 strips orange peel
- 3/4 cup extra-virgin olive oil
SALMON****Tossed Salad with Smoked Salmon and Capers

This was very good - makes a great lunch
- 2 cups mixed baby lettuce/arugula blend
- 2 tbsp. thinly sliced red onion or shallot
- 1/4 cup thinly sliced cucumbers, cut in half-moon shapes
- 2 tbsp. capers
- 2 oz. thinly sliced smoked salmon
- 1 1/2 tbsp. preserved lemon dressing (Mediterranean Fresh)
- 2 tbsp. olive oil croutons
- salt, pepper and fresh or dried dill, to taste
- 1 hard boiled egg, chopped (not in calorie count)
EGGPLANT-Baby Eggplants with Oregano and Red Onions

- 1 1/4 pounds baby eggplant
- 3 tablespoons regular olive oil
- 2 teaspoons dried oregano
- 1 small red onion, cut into thin half-moons
- 3 tablespoons red wine vinegar
- 1 teaspoon kosher salt or
- 1/2 teaspoon table salt, or to taste
- 1/4 cup extra-virgin olive oil
- 1 clove garlic, peeled
- 1 1/2 tablespoons cold water
- Few sprigs fresh oregano (optional)
