CAKES*****Canned Salmon Patties w/Spicy-Sweet Yogurt Dressing

- FOR THE DRESSING:
- 1/2 tbsp. capers, minced
- 2 cornichons, minced
- 1 small shallot, minced
- 1/2 tsp. dijon
- 1 dash hot sauce
- 1/4 lemon, zested and juiced
- 2 tbsp. greek yogurt
- FOR THE PATTIES:
- 1 can Clover Leaf salmon, drained and flaked
- 1/2 Granny Smith apple, peeled and diced 1/4"
- 1 tablespoon Hellmann's Light
- 1/4 cup panko
BLUEBERRIES****Stewed Blueberries

- 2 lbs. fresh blueberries, rinsed
- 1/4 cup sugar
- 1/3 cup orange juice, plus grated zest
- 3 lemon slices
- 1 pinch of cinnamon (I used half a cinnamon stick)
ZUCCHINI - Broiled Zucchini

- 1 - 2 small zucchini, quartered lengthwise and cut into half-moons (about 1 cup of pieces)
- 2 teaspoons olive oil

CAKE - Cranberry Ginger Upside Down Cake with Rum Whipped Cream

To make the topping, butter a 9-inch round cake pan
- 4 tablespoons unsalted butter
- 3/4 cup firmly packed brown sugar
- 2 tablespoons ginger, freshly grated
- 3/4 pound fresh cranberries
- 1 cup all-purpose flour
- 1/2 cup quick cooking fine polenta or corn flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 8 tablespoons unsalted butter
- 1 cup granulated sugar
- 2 Eggs (yolks and whites separated)
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/8 teaspoon cream of tartar
- 1 cup heavy cream
- 2 ounces dark rum
- 2 tablespoons confectioner's sugar
ASIAN****Miso Soup with Tofu & Cabbage

- 1 1/2 cups Asian stock or organic chicken or vegetable stock
- 1/2 " piece of ginger
- 1 clove of garlic (if not using prepared stock)
- 1 fresh red chilli, or to taste
- 1/4 Napa or Savoy cabbage
- 1 small carrot
- 1 tablespoon miso paste, melted in 1/4 cup of the hot broth
- 2 teaspoons low-salt soy sauce
- 1 teaspoon sesame oil
- 50 g tofu of choice
Egg Salad Sandwich

1.Mix all ingredients, refrigerate until ready for serving
- 6 hard cooked eggs, chopped
- 1 tablespoon minced onion
- 2 minced stalks celery, plus leaves
- 1 teaspoon celery seed
- Dash salt
- Dash black pepper
- 1/2 cup mayonnaise or salad dressing
- 1 teaspoon prepared mustard
BASMATI****Yogurt Rice with Cumin and Chile (Actifry)

- 2 cups cooked white basmati rice (11 tablespoons raw)
- 1 tablespoon EVOO
- 1 tablespoon minced fresh ginger (use the real thing)
- 1 teaspoon cumin seeds
- 1 jalapeno chile, halved and thinly sliced
- 2 tablespoons chopped fresh cilantro
- 3/4 teaspoon kosher salt
- 3/4 cup fat-free greek yogurt
- lime wedges, to serve
TOMATO - Arugula and Bulgur-Stuffed Tomatoes

In saucepan, bring 1-1/2 cups water to boil
- 3/4 cup whole grain bulgur
- 4 cups baby arugula leaves
- 1/3 cup light cream cheese, softened
- 1/2 cup chopped fresh dill
- 1/2 cup chopped fresh mint
- 1 tbsp. lemon juice
- 1 clove garlic, minced
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 cup shredded smoked Gouda cheese or white cheddar cheese
- 4 beefsteak tomatoes

Melt the butter in a sauté pan
- 1 tablespoon butter
- 8 pearl onions, peeled and halved
- 2 slices bacon, cut into lardons
- 1/2 pound shelled fresh peas
- 1/4 cup chicken stock
- Salt and pepper
- 1/2 bib or butter lettuce, cored and sliced
NOODLES****Udon noodles with Asparagus, Scallions and Hot and Sour Sauce

- SAUCE:
- 1 pkg. PC Udon
- 1/2 cup chicken broth
- 8 spears asparagus (cut into 1 inch pieces) OR 1 cup Broccoli florets or leftover roasted baby bok choy
- 1 oz. baby spinach
- 2 green onions, sliced
- 2 tbsp. fresh basil chiffonade
- 1 tsp. toasted sesame seeds (white and black, mixed)
- lime wedges, to serve
- 1 tbsp. soy sauce
- 1/2 tbsp. rice vinegar
- 1/2 tbsp. sweet chili sauce
- 1/2 tsp. hot chili oil
- 1/2 tsp. sesame oil
- 1/2 tsp. minced garlic
- 1/2 tsp. grated ginger
