MIXED****Grilled Vegetables

- DRESSING:
- 1 red bell pepper, seeded and cut in chunks
- 1 yellow bell pepper, seeded and cut in chunks
- 3 - 4 mild long yellow peppers, halved and seeded
- 1 zucchini sliced 1/4-inch-thick
- 2 yellow squash sliced 1/4-inch-thick
- 3 small eggplant, sliced lengthwise 1/4-inch-thick
- 8 green onions, roots cut off
- 1 red onion, sliced thickly into rings and threaded onto skewers
- Salt and freshly ground black pepper
- 2 tablespoons garlic-flavoured olive oil for brushing vegetables
- 1/4 cup olive oil
- 1 tablespoon balsamic vinegar
- 2 tablespoons red wine vinegar
- 2 garlic cloves, minced
- 1 tablespoon chopped fresh parsley leaves
- 1 tablespoon chopped fresh thyme
SALMON*****Proscuitto Roast Salmon

- Serves 2
- 1 PC Organic Atlantic Salmon - 1 - 5 ounce filet is perfect for both of us
- 1 - 2 tbsp. Dijon mustard
- 2 slices Serano Ham or Prosciutto
- 1 teaspoon olive oil (to pan fry)
- Lemon wedges (me) and tartar (Dan) for serving

- 6 servings
- 450 grams extra lean ground beef - 1 lb.
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/4 sweet bell pepper, finely minced
- 1/2 to 1 jalapeno, finely minced (if on hand)
- 1 small carrot, finely minced
- 1 stalk celery, finely minced
- 1/4 cup chili sauce
- 1/4 cup ketchup
- 1 1/2 tbsp. Worcestershire sauce
- 1 tbsp. brown sugar
- 1 tbsp. yellow mustard
- 1 tbsp. red wine vinegar
- 1/4 cup chicken broth
- 1/2 tsp. dried oregano
- 3/4 tsp. chile powder
SALSA****Tomato, Avocado and Radish Salsa (WW )

Originally had this with Mexican Chili Beef Burgers but that recipe was scrapped
- 2 medium tomatoes, seeded and diced
- 2 medium radishes, minced
- 1/3 of a medium avocado, diced
- 1 tbsp. fresh coriander or coriander paste
- 1 tbsp. fresh lime juice (juice of 1 - 2 key limes)
- pinch of Malden salt
VEG****Michael Symon's Angel Hair Pasta with Pancetta and Broccoli

- 4 oz. Angel Hair Pasta
- 1 1/2 tablespoons Pine Nuts
- 4 oz. Broccoli florets
- 1/4 teaspoon Chile Flakes
- 1 1/2 ounces Pancetta
- 2 tablespoons Parmesan cheese
- 1 tablespoon Olive Oil
- 1 Garlic clove (sliced)
BRUSSELS SPROUTS****Roasted Brussels Sprouts With Pomegranate and Hazelnuts

This was very good, even Dan liked it, including the pomegranate
- 12 ounces Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- Maldon salt and freshly ground pepper
- 1 1/2 tablespoons pomegranate molasses
- 1/3 - 1/2 cup pomegranate seeds
- 1/3 cup toasted flaked hazelnuts
- 1 - 1 1/2 tbsp. honey
PESTO****Salsa Verde

This was very good, basically a different-tasting pesto without cheese
- 6 ounces walnuts
- 1/2 cup coarsely chopped parsley
- 1 tbsp. coarsely chopped basil
- 2 cloves garlic, chopped
- 2 small cornichons
- 1 hard-boiled egg yolk
- 1/2 cup best EVOO
- 1 tbsp. sherry vinegar
- salt and pepper to taste
TOMATO*****Open-Faced Bacon, Tomato and Avocado Sandwich

Toast bread to desired level
- 3 slices whole grain or marble rye bread, halved
- 1 tablespoon Hellman's mayo
- 1 teaspoon Sriracha Mayo
- 1/2 to 1 teaspoon maple syrup (judge by consistency)
- 1/2 teaspoon dijon or maple dijon mustard
- 1/4 ripe but firm avocado, thinly sliced
- 1 large tomato, sliced
- 6 slices microwave bacon, halved
