BREAST****Marmalade Chicken for Two - 6 Points

Dan loves this. It's not my first choice but it's quick and easy and good with some brown basmati rice
- 1/2 cup chicken broth
- 1 tbsp. red-wine vinegar
- 1 tbsp. orange (or ginger) marmalade
- 1/2 tsp. cornstarch
- 1/2 tsp. dijon
- 6 - 8 ounces chicken tenders
- sea salt and freshly ground pepper
- 1 pinch cayenne
- 1 tbsp. olive oil
- 1 shallot, minced
- grated rind of 1/2 orange
Chicken - BBQ-Ranch Chicken Mason Jar Salad

Divide all ingredients among 5 mason jars
- 5 wide mouth mason jar salads
- 10 tablespoons ranch yogurt dressing
- 5 tablespoons barbecue sauce
- 1 quart cherry tomatoes, halved
- 5 baby cucumbers, sliced
- 1 avocado, peeled, seed removed, and chopped
- 5 tablespoons canned black beans
- 5 tablespoons frozen corn
- 1/2 red onion, chopped
- 3 cups chopped rotisserie chicken
- 4-5 cups chopped romaine
- 9 tortilla chips
TUNA - Arugula & Tuna Jar Salad

- 4 tablespoons Lemon Herb Vinaigrette (see recipe)
- 1/2 cup canned chickpeas, drained and rinsed
- 14 cherry tomatoes, halved
- 2 baby cucumbers, sliced
- 1/4 cup sliced red onion
- 1/2 small avocado, diced
- 1 small can of Rio Mare tuna, drained
- 3 cups baby arugula
YOGURT****Blueberry or Four-Berry Blend & Granola Yogurt Cups

Combine berries, lemon juice, sugar and salt in a non-stick saucepan
- 2 1/2 cups (350 grams) blueberries, fresh or frozen OR frozen Four-Berry Blend
- juice of 1 lemon wedge
- 1/2 tablespoon sugar, honey or maple syrup
- pinch of kosher salt
- 1 teaspoon vanilla extract (Optional)
- 12 oz. 2% Greek yogurt
- 80 grams granola (nutrition content based on Dorset Cereal's High Fibre granolas)
- 20 grams Cacao nibs

- 5 - 8 slices beef braciole from Tarinis (1 layer is about 10 ounces)
- Coarse salt and black pepper
- 3 - 4 slices prosciutto di Parma, halved
- 1/2 cup panko
- 2 tablespoons milk
- 1/3 cup (20 - 30 grams) freshly grated Parmigiano-Reggiano
- 1/2 small onion, finely chopped
- 1/4 cup flat-leaf parsley leaves, chopped
- 1/2 cup chopped arugula or spinach arugula blend
- Plain round toothpicks
- 2 tablespoon extra-virgin olive oil
- 2 cloves garlic, cracked away from skin (removed before serving)
- 2 tablespoons becel or butter
- 12 crimini mushrooms, finely chopped
- 3 - 4 small sprigs fresh thyme (removed before serving) oops forgot this!
- 2 tablespoons flour
- 1/2 ounce dried porcini mushrooms
- 1 cup dry red wine
- 1 can consome (no water)
- 1 rounded tablespoon tomato paste

MUFFINS*****Berry Ricotta Muffins

These are super - moist and tasty - I'm sure it's the ricotta
- 1 cup whole wheat flour
- 1 cup unbleached all-purpose flour
- 1/2 cup oatmeal
- 1/4 cup wheat or oat bran
- 2 tbsp ground flax seeds (didn't add)
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 6 tablespoons vegetable or nut oil - I used almond oil (to replace 1/2 cup butter)
- 1/2 cup brown sugar (I used demerara brown)
- OR
- 1/4 cup splenda brown
- 2 eggs
- 1 cup Ricotta cheese - I used light
- 1/2 cup milk - I used skim
- 1 cup frozen berries OR 1/2 generous cup dried berries, rehydrated in milk or juice - used 1/4 cup dried blueberries and 1/4 cup diced dried pears

This was great. I had it for lunch, with some bread and some preserved lemon vinaigrette
- 4 medium organic, medium-sweet organic onions, unpeeled
- 4 handfuls coarse salt
- 1 egg yolk
- 1/2 clove garlic, finely minced
- 1 teaspoon tarragon vinegar
- 1 pinch Salt and pepper
- 1/2 cup grape seed oil
- Lemon juice to taste
- handful chopped fresh tarragon
- 1 handful chopped fresh thyme
