CHICKEN AND DUMPLINGS

FEAST MAGAZINE
- For the thighs:
- 1/3 cup flour
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp freshly ground black pepper
- 1/2 tsp smoked paprika
- 6 chicken thighs, bone-in, skin-on
- 4 TBS bacon fat
- for the chicken broth:
- 4 c chicken stock
- 2 c water
- 1 head garlic
- 2 onions divided
- 1 bunch chives
- 1 leek
- 4 stalks celery
- 4 carrots
- 4 TBS apple cider vinegar
- S&P
- for the dumplings:
- 2/3 c AP flour
- 1/3 c yellow cornmeal
- 2 TBS melted lard
- 2 tsp sugar
- 1/2 tsp salt
- 2 tsp baking powder
- 2 TBS finely chopped fresh thyme, divided
- 2 TBS finely chopped fresh tarragon, divided
- 1/2 cup buttermilk
- 2 limes halved
- 2 Thai chile peppers
CHEESEBURGER SLIDER CASSEROLE

- 1-12 count package Hawaiian rolls
- 1 lb lean ground beef
- 1 tap each: salt, pepper, cumin, mustard powder
- 1/2 tap paprika
- 3 cloves garlic, minced
- 2 cups diced onions
- 1-10 OZ can diced tomatoes, drained
- 1 stick butter
- 2 TBS brown sugar
- 1 TBS Worcestershire sauce
- 1 TBS yellow mustard
- 1 TBS sesame seeds
- 12 slices (or less) of cheddar cheese
CLASSIC SANGRIA

In a pitcher or large bowl, combine orange, lime, apple, grapes, brandy, and red wine
- 1 orange, halved and cut into 1/4" slices
- 1 lime, thinly sliced crosswise
- 1 Granny Smith apple, cored, cut into 1" pieces
- 1 cup green grapes, halved
- 1/4 c brandy
- 1 bottle dry red wine (Rioja or Cabernet Sauvignon)
- 32 oz lemon-lime soda, chilled.
ROASTED RED PEPPER SALAD

Serve as a salad. Or serve as an appetizer w/ chewy, crusty bread
- Dressing:
- 3/4 cup EVOO
- 1/4 cup sherry vinegar
- 2 cloves garlic, minced
- 2 TBS chopped fresh flat leaf parsley
- 2 TBS chopped fresh basil leaves
- 2 TBS chopped fresh mint leaves
- 1/2 tsp granulated sugar
- Salad:
- 4 large red bell peppers, roasted, peeled, seeded
- 3 TBS capers
- 12 black olives, pitted and chopped
SKILLET BAKED ZITI

ROASTED GREEN BEANS W/ MUSHROOMS

1. Oven 450 degrees 2. Combine first 4 ingredients on a jelly-roll pan coated w/ cooking spray
- 6 cups quartered cremini mushrooms, about 1 lb
- 1 cup thinly sliced shallots
- 5 garlic cloves, chopped
- 1 1/2 lbs green beans, trimmed
- Cooking spray
- 1 1/2 TBS canola oil
- 1 TBS chopped fresh thyme
- 1/2 tsp freshly ground black pepper
- 3/4 tsp salt
PORK SCHNITZEL WITH ARUGULA SALAD

1. Pound pork until 1/4" thick
- 4 boneless pork cutlets or thin-cut loin chops
- Salt
- 1/2 cup flour
- 1 egg
- 2 TBS water
- 1/2 lb fresh bread crumbs
- 3/4 cup fresh grated Parmesan
- 1 bunch arugula
- 2 TBS olive oil
- 2 TBS lemon juice
- 1/2 cup (or less) vegetable oil

SPINACH CHEESE PUFFS

1. In 3 qt saucepan over medium heat, combine milk, butter and salt until butter melts and mixture boils
- 1-10 oz package frozen spinach, thawed and drained
- 1 cup milk
- 1/2 cup butter
- 1 tsp salt
- 1 cup flour
- 4 large eggs
- 1/4 cup shredded swiss
- 1/2 cup parmesan
