- TURKEY:
- 3 onions, medium dice
- 3 ribs celery, coarsely chopped
- 2 carrots, coarsely chopped
- 5 cloves garlic
- 5 sprigs thyme
- 1 cup chicken broth
- Turkey parts, leave breast whole
- 3-4 TBS butter, melted
- 1 TBS table salt
- 2 tsp black pepper
- GRAVY:
- 3 TBS butter
- 3 TBS flour
- 2 bay leaves

Make sure not to overcook the potatoes or the salad will be quite sloppy
- 2 pounds Yukon Gold potatoes , peeled and cut into 3/4-inch cubes
- 1 1/2 teaspoons table salt
- 3 tablespoons dill pickle juice , plus 1/4 cup finely chopped dill pickles
- 1 tablespoon yellow mustard
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon celery seed
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 onion, red (small) , chopped fine
- 1 rib celery , chopped fine
- 2 hard-cooked eggs , peeled and cut into 1/4-inch dice (optional)

Place beans in a large saucepan and cover with water
- 1-1/2 pounds fresh green beans, trimmed and cut into 2-inch pieces
- 2 tablespoons minced fresh parsley
- 4 teaspoons olive oil
- 1-1/2 teaspoons grated lemon peel
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup pine nuts, toasted
HOLIDAY BISCOTTI W/ CRANBERRIES AND PISTACHIOS

- 2 1/4 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 6 tablespoons (3/4 stick) unsalted butter, room temperature
- 3/4 cup sugar
- 2 large eggs
- 1 tablespoon grated lemon peel
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon whole aniseed
- 1 cup dried sweetened cranberries
- 3/4 cup shelled natural unsalted pistachios
- 6 ounces imported white chocolate, chopped
POPPY SEED DRESSING

- S&P to taste
- 1/2 sup canola oil
