CHERRY, ALMOND AND CINNAMON GRANOLA

Preheat the oven to 350 degrees F
- 4 cups old-fashioned rolled oats
- 2 cups sweetened, shredded coconut
- 2 cups sliced almonds
- 1 1/2 cups dried cherries, chopped
- 1/2 cup vegetable oil
- 1/3 cup good honey
- 2 teaspoons ground cinnamon
SMOKED SALMON, ARUGULA AND GOAT CHEESE TART

For the filling: In a medium skillet, heat the olive oil over medium-high heat
- Pie crust for tart pan
- 3 tablespoons olive oil
- 1 medium leek, pale green and white part only, cleaned and thinly sliced
- 6 cups baby arugula leaves (6 ounces)
- 2 ounces goat cheese, crumbled
- 3 ounces smoked salmon, chopped into 1/2-inch pieces
- 6 large eggs, at room temperature
- Kosher salt and freshly ground pepper
- Special equipment: a 9-inch diameter tart pan with a removable base

- 2 tsp EVOO
- 1 TBS minced fresh tarragon
