Rice Krispies Treats

Melt margarine in large saucepan over low heat
- 1/4 cup margarine or butter
- 1 pkg. (10 oz., about 40) regular marshmallows or 4 cups mini marshmallows
- 6 cups Rice Krispies cereal
S'mores Cupcakes

Crust: Preheat the oven to 350 degrees
- Crust:
- 1 1/2 cups graham crackers (approx. 1 pkg out of the Honeymaid box)
- 1/4 cup sugar
- 5 T unsalted butter, melted
- 2 oz bittersweet chocolate, chopped into small pieces
- Marshmallows (you'll need about 100 mini marshmallows)
- Cake:
- 2 cups plus 2 T sugar
- 1 3/4 cups all purpose flour
- 3/4 cup cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup canola oil
- 2 tsp vanilla extract
- 1 cup boiling water
- Frosting:
- 8 egg whites, room temperature
- 2 cups sugar
- 1/2 tsp cream of tartar
- 2 tsp vanilla extract
- 1 large Hershey bar
Yam Cakes

Poke holes in the yam or sweet potato with a fork and place on a baking sheet
- 1-2 yams or sweet potatoes
- 1 cup almond or coconut milk

I started with a pretzel crust
- Crust:
- 3/4 C butter, room temperature
- 3 tbsp brown sugar
- 2 1/2 C crushed pretzels
- Cupcakes:
- 3/4 C unsweetened cocoa powder
- 1 1/2 C all-purpose flour
- 1 C sugar
- 1 1/2 tsp baking soda
- 3/4 tsp baking powder
- 3/4 tsp salt
- 2 large eggs
- 3/4 cup warm water
- 3/4 C buttermilk
- 3 T vegetable oil
- 1 tsp vanilla extract
- Ganache:
- 9 ounces bittersweet chocolate, chopped
- 1 cup heavy cream
- 1.5 tsp vanilla extract
- Topping:
- 24 circular pretzels
- 24 milk chocolate candy kisses
- 1 (1.69 ounce) package mini candy-coated chocolates
Spaghetti Squash Saute

Cut squash in half and boil in a large pot filled with water until tender
- 1 large spaghetti squash
- 2 T raw or organic butter
- 1 medium shallot, minced
- 2 T red pepper, finely chopped

Whole Wheat Banana Pancakes (or Waffles!) (100 Days of Real Food)

1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt
- 2 cups whole-wheat flour (I use King Arthur organic white whole-wheat flour)
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 T honey
- 2 large eggs, lightly beaten
- 1 3/4 cups milk
- 2 T butter, melted, plus extra for frying
- 2 ripe bananas, mashed
- 100% pure maple syrup, for serving

- 2 sticks (1/2 Pound) Butter (salted) Softened
- ½ cups White Sugar
- 1 -½ cup Brown Sugar, Packed
- 2 whole Large Eggs
- 1 Tablespoon Vanilla Extract
- 1 -½ cup All-purpose Flour
- ½ teaspoons Baking Soda
- 1 teaspoon Baking Powder
- 2 teaspoons Kosher Salt
- 1 -½ cup Oats (either Quick Or Regular)
- ½ cups M & M's (more To Taste)
- ½ cups Pecans, Chopped (more To Taste)
- ¾ cups Chocolate Chips (milk Or Semi-sweet)
- ½ cups Peanut Butter Chips
- 2 -¼ cups Rice Krispies
Cucumber Salsa

- 3 cups cherry tomatoes, quartered
- 1 cup green, red & yellow peppers, chopped
- 2 medium cucumbers, peeled, seeded & chopped
- 1 jalapeno pepper, seeded & chopped
- 1 small Vidalia onion
- 1 clove garlic, minced
- 4 T lime juice
- 1 tsp. fresh parsley, minced
