Stuffed Potatoes

Preheat oven to 350 degrees F (175 degrees C)
- 4 large baking potatoes
- 2 cups shredded Cheddar cheese
- 1 (16 ounce) container sour cream and onion dip
Green Goddess Dressing

From Shirley You can store the dressing glad containers or plastic bottles
- 2 med avocados chopped in cubes
- 2 T. lemon or lime juice
- 1 T. chopped basil leaves
- 1 T. tarragon leaves chopped
- 1 garlic clove, minced
- 1/2 c. evoo ( extra virgin olive oil)
- salt & pepper
- Add the first 5 items to processor and blend til smooth..then while processing slowly add the evoo til thick.
- or
- 1/2 c. sour cream
- 1/2 c. mayo
- 1 lemon, juiced
- 2 garlic cloves minced
- 2 t anchovy paste
- 1/2 c. flat leaf parsley chopped, 2 T. chopped taragon leaves, & 2 T. chopped fresh chives, salt & pepper.
Pork Chops with Fresh Tomato, Garlic and Feta cheese

Heat 1 tablespoon oil in a skillet over medium heat
- 2 2 2 tablespoons olive oil, divided
- 1 1 1 large onion, halved and thinly sliced
- 4 4 1 pork loin chops, 1 inch thick
- to to taste
- to pepper to taste
- to powder to taste
- 1/2 1/2 1/2 pint red grape tomatoes, halved
- 1/2 1/2 1/2 pint yellow grape tomatoes, halved
- 3 3 3 cloves garlic, diced
- 1 1 1 tablespoon dried basil
- 2 1/2 2 1/2 1/2 teaspoons balsamic vinegar
- 4 4 4 ounces feta cheese, crumbled
- Directions
- 1 1 tablespoon oil in a skillet over medium heat. Stir in the onion and cook until golden brown. Set aside.
- 1/2 to tablespoon oil in the skillet. Season pork chops with salt, pepper, and garlic powder, and place in the skillet. Cook to desired doneness. Set aside and keep warm.

Heat oven to 350° F. Rub an 8-inch square cake pan with the butter
- 2 tablespoons unsalted butter, at room temperature
- 1/3 cup dark brown sugar
- 2 peaches, sliced
- 1 1/2 cups all-purpose flour, spooned and leveled
- 3/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine salt
- 3/4 cup buttermilk
- 2 large eggs
- 1/3 cup canola oil
- 1 teaspoon pure vanilla extract

- 3/4 cup cocoa
- 4 ounces semi-sweet chocolate
- 2 cups boiling water
- 1 cup unsalted butter, at room temp
- 1 1/2 cups sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups flour
- 2 scant teaspoons baking powder
- 1 teaspoon salt
- 8 ounces semi-sweet chocolate
