Eggnog French Toast

In a bowl, beat eggs, eggnog, sugar and extract; soak bread for 2 minutes per side
- 8 eggs
- 2 cups eggnog
- 1/4 cup sugar
- 1/2 teaspoon vanilla or rum extract
- 20 to 26 slices English muffin bread
- Confectioners' sugar, optional
- Maple syrup
Soda Pop Cupcakes

- 1 box cake mix, any flavor
- 1 can room temperature soda, any flavor
Chicken Parmesan

Lightly pound the boneless chicken breasts to even out the thickness of the meat
- 4 boneless chicken-breast halves 1/4 cup olive oil
- 1/2 cup flour 2 cups tomato sauce, homemade or prepared
- 2 eggs, beaten with 1/4 cup milk or water
- 4 ozs mozzarella cheese or cheddar, shredded
- 1 cup seasoned Italian bread crumbs 1/4 cup Parmesan cheese
Slow Cooker Pot Roast

Heat the butter and sunflower oil in a large skillet
- 2 T unsalted butter
- 1 T Sunflower Oil
- 1 Large Onion, cut into wedges
- 3 Lb boneless top round or rump roast
- 3 carrots, peeled and thinly sliced
- 3 medium white potatoes, cubed
- 2 bay leaves
- 1/2 tsp salt
- 2 Envelopes onion soup mix
- 1 T cornstarch
Double Decker Pumpkin Pie Yogurt Coffee Cake

Heat oven to 350°F. Grease 10-inch fluted tube cake pan with shortening; lightly flour
- 1 1/3 cups granulated sugar
- 6 eggs
- 1/2 cup unsalted butter, melted, slightly cooled
- 1 teaspoon vanilla
- 1 container (4 oz) Yoplait® Light pumpkin pie yogurt (from 4-pack)
- 2 1/4 cups Gold Medal™ all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1 cup chopped pecans
- 2/3 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons pumpkin pie spice
- 2 teaspoons vanilla
- 2 cups powdered sugar
- 1 to 2 tablespoons milk

- 1 tablespoon olive oil
- 3 skinless, boneless chicken breast halves
- 1 tablespoon ground black pepper, or to taste
- 3 tablespoons onion powder, or to taste
- 1 (28 ounce) can chopped stewed tomatoes, 1/2 the liquid reserved
- 1 (14 ounce) can chicken broth
- 1 (10 ounce) package frozen mixed vegetables
- 1/4 cup water
Shrimp Scampi

- 1/4 c. extra virgin olive oil
- 2 t. anchovy paste
- 2 lbs shrimp
- 2-3 garlic cloves (minced)
- pinch crushed red pepper flakes

- 1 cup milk
- 1/2 cup pumpkin puree
- 3 large eggs
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 1 (12-count) package KING'S HAWAIIAN Original Hawaiian Sweet Dinner Rolls, cubed
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar, packed
- 1/2 teaspoon cinnamon
- 1/4 cup unsalted butter, cut into cubes
- 1/4 cup chopped pecans
- 2 tablespoons confectioners' sugar
- 8 ounces cream cheese, at room temperature
- 1/3 cup confectioners' sugar
- 1/4 teaspoon ground cinnamon

Leftovers from Slow Cook Chicken Tacos
- approximately 1 cup of leftover chicken taco meat
- 1 32. oz box of chicken broth
- 1 can of Milder Ro-Tel (tomatoes with chilies)
- 1 can of corn
- 2 tablespoons fresh chopped cilantro
- 1 tablespoon lime juice
