Peanut Butter Crunch Cheesecake Squares

Quick and Easy Chicken Enchilada Casserole

Directions Preheat oven to 350 degrees F (175 degrees C)
- Precooked chicken I bought grilled chicken in bag in refrigerator section
- 18 (6 inch) corn tortillas, torn in half
- 1 (28 ounce) jar of salsa sauce
- 1 (16 ounce) package shredded Monterey Jack cheese
- 1 (8 ounce) container reduced fat sour cream

In a large saucepan over low heat, melt butter; add garlic and cook for 30 seconds

Pork Cutlets with Butternut Squash, Apple, and Cranberry Sauté

Italian Tuna Pasta Salad

Bring a large pot of salted water to a boil
- 8 ounces dried orecchiette or other small pasta
- 15 ounces cannellini beans, rinsed and patted dry, divided, for the dressing
- 3 scallions, thinly sliced
- 1 clove garlic, finely chopped, for the dressing
- 2 tablespoons fresh sage, chopped
- 2 tablespoons freshly squeezed lemon juice, for the dressing
- 1 tablespoon drained capers
- 3/4 teaspoon salt, for the dressing
- 7 ounces tuna, canned or jarred in olive oil, large chunks broken up
- 1/4 cup extra-virgin olive oil, for the dressing
- Salt and pepper to taste
Island Pineapple Jello Salad
