Bonefish Grill Recipe
- Serves 4
- 4 (7 oz.) pieces Wolf Fish
- 4 oz. shrimp
- 4 oz. lump crab
- 3 oz. sliced almonds
- 4 tablespoons of butter
- finely grated zest of one lemon
- salt and pepper to taste
Cream Cheese Chicken Enchiladas

Preheat oven to 325 degrees
- 5 5 5 oz. reduced fat cream cheese, softened
- 1/4 1/4 1/4 cup light sour cream (or plain Greek yogurt)
- 10 10 can 10 oz. can of enchilada sauce
- 1 1 1 cup shredded cheddar cheese, divided
- 1 1 1 cup shredded monterey jack cheese, divided
- 2 2 2 cups cooked shredded chicken
- 1 1 1 cup frozen corn kernels, thawed (canned corn works, but drain it first)
- 4 4 can 4 oz. can diced green chiles
- 1/2 1/2 1/2 tsp chili powder
- 1/4 1/4 1/4 tsp cumin
- Salt and pepper
- 4 4 4 scallions, thinly sliced
- 8 8 8 (8-inch) whole wheat tortillas
Crab Bake

Preheat oven to 325 degrees F
- 1 large egg, lightly beaten
- 3/4 cup mayonnaise
- 2 tablespoons lemon juice
- 1 1/2 teaspoons hot sauce
- 1/4 teaspoon salt
- 1 pound fresh crabmeat, drained and flaked
- 1/4 cup fine, dry breadcrumbs (store-bought)
- 1 tablespoon butter, melted
Slow Cooker Chicken Stroganoff

Put chicken, margarine and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours
- 3 Skinless, boneless chicken breast halves - cubed
- 1 T and 1 1/2 teaspoons margarine
- 3/4 (7oz) pkg dry Italian style salad dressing mix
- 3/4 (8oz) pkg cream cheese
- 3/4 (10.75 oz) can condensed cream of chicken soup

Combine ingredients in a large bowl and mix well
- 3 medium cucumbers, peeled and sliced 1/4 inch thick
- 1 medium onion, sliced and separated into rings
- 3 medium tomatoes, cut into wedges
- 1/2 cup vinegar
- 1/4 cup sugar
- 1 cup water
- 2 teaspoons salt
- 1 teaspoon fresh coarse ground black pepper
- 1/4 cup oil

- 1 heaping half cup (6 oz) Cookies & Cream ice cream
- 1/4 Cup hot fudge topping (chilled or room temp)
- (optional) 1/4 cup of water – (I used this to thin out the mix, as it was super thick, & it still made for great results.)
Blueberry Salad

- 2 cups hot water
- 1 (15 oz) can blueberries (undrained)
- 1 small can crushed pineapple (drained)

- 1 cup sour cream
- 1/2 cup Cool Whip
- 1/4 cup sugar
