Noodle broth

Combine all but the soup flavouring in a large pot
- 7 cups Sea-Vegetable & Fish Stock or Chicken Stock
- 1 tsp salt
- 1/3 cup soy sauce
- 2 tsp. sugar
- 2 tbsp. mirin
- Few drops of concentrated soup flavouring (Memmi) if desired
Crunchy Ramen Salad

Shred or slice cabbage, red pepper, carrots, and cucumber
- Dressing:
- 1 cup green cabbage
- 1 cup red cabbage
- 1 cup red pepper
- 1/2 cup carrots
- 1 cup Japanese cucumber
- 4 stalks green onion
- 1 cup broccoli
- 1 cup bean sprouts
- 2 pkg ramen noodles, crumbled
- 1/2 sliced almonds
- 1/4 cup toasted sesame seeds
- 1 pkg ramen soup base
- 1 tbsp butter

- 2 tbsp sugar
- 1/3 cup vegetable oil
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup vinegar
- 1 pkg ramen soup base

Pumpkin Loaf

Sift dry ingredients together
- 3 1/2 cups flour
- 2 tsp baking powdr
- 1/2 tsp baking soda
- 1 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp cloves
- 4 slightly beaten eggs
- 2 2/3 cups sugar
- 2 cups pumpkin
- 2/3 cup water
- 1/2 cup vegetable oil
- 2/3 cup chopped nuts
- 2/3 cup raisins
Soup, Yam and Tomato

- Ingredients:
- 1 1/2 lbs yams (about 2 medium) unpeeled
- 1/2 cup canola oil
- 5 tbsp finely chopped garlic (15 medium cloves)
- 4 tbsp chopped ginger
- 4 cups pureed tomatoes (8 medium)
- Spices:
- 1 1/2 tsp turmeric
- 1 tbsp ground black mustard seeds + 2 tsp fenugreek seeds OR
- 1 tbsp ground cumin + 1 tbsp coriander
- 1 tbsp crushed cayenne pepper
- 1 tbsp salt
- 8 cups water

Cream butter and sugar until fluffy
- 2/3 cup butter
- 1/3 cup sugar
- 2 eggs, separated
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1-1/2 cup flour

Basic Sweet Dough for Sweet Rolls

1. Sprinkle yeast into lukewarm water, add 2 tsp sugar, let stand for 10 minutes, then stir

- 1 cup lukewarm water
- 2 tsp sugar
- 1 cup milk
- 1/4 cup butter
- 1/2 cup sugar
- 1 tsp salt
- 6 cups Five Roses All-purpose flour
- 2 eggs, beaten

1. Preheat oven to 410 degrees F
- 75 ml (5 tbsp) butter, divided
- 750 ml (3 cups) fresh bread crumbs
- a garlic clove, minced
- 15 ml (1 tbsp) fresh parsley, chopped
- 24 oysters
- 150 ml (2/3 cup) freshly grated parmesan cheese
Duck Breast, Marinated

- 3 duck breasts, skin on
- 1/2 cup cooking oil
- 1 tbsp ground cumin
- 1 tsp salt
- 1 tsp ground cayenne pepper
- 1 tsp fenugreek seeds
- 1 tsp ground black mustard seeds
- 1 tsp garam masala

- 100 mL yogurt
- 30 mL olive oil
- 1/2 lemon

Combine dry ingredients. Make a well in the centre and add egg yolks, oil, orange rind and juice and beat well
- 5 egg yolks
- 1 cup egg whites
- 3 tbsp grated orange rind
- 3/4 cup orange juice
- 2 1/4 cups sifted cake flour
- 1 1/2 cups sugar
- 3 tsp baking powder
- 1 tsp salt
- 1/2 cup salad oil
