Blueberry Muffins

Preheat oven to 400 F Cream butter with margarine and sugar until light and creamy
- ¼ cup butter
- 3 tablespoons margarine
- 2/3 cup sugar
- 1 egg, beaten
- 2 ¼ cups all-purpose flour
- 1 tsp. salt
- 4 tsp. baking powder
- 1 cup milk
- 1 – 1 ¼ cups blueberries
Emeril's Essence

Mix all ingredients together
- 2 ½ tbsp paprika
- 2 tbsp. garlic powder
- 2 tbsp. salt
- 1 tbsp. pepper
- 1 tbsp. onion powder
- 1 tbsp. cayenne powder
- 1 tbsp. oregano
- 1 tbsp. thyme
Raspberry Margarita Punch

In a food processor, blend raspberries with lemonade concentrate until smooth
- 2 cups frozen raspberries, thawed, pureed and seeded
- 1 large container frozen lemonade
- 1 quart water
- 2 cups orange juice
- 1 1/2 cups tequila
- 3 lemons, sliced
Squid with Black Bean Sauce

Score the squid and cut into strips Heat oil in wok, sitr fry the squid
- 1 lb small cleaned squid
- 3 tbsp. oil
- 1 inch piece of giner root, grated
- 1 clove garlic, crushed
- 8 green onions, cut diagonally into 1 inch lengths
- 1 red pepper, seeded and juliened
- 1 fresh green chili, seeeded and juliened
- 6 mushrooms, sliced
- 1 tsp. five-spice powder
- 2 tbsp. black bean sauce
- 2 tbsp. soy sauce
- 1 tsp. sugar
- 1 tbsp. rice wine
Chicken Parmigiana

Heat 3 tbsp of olive oil in a large skillet over medium heat
- 1 cup flour
- 2 eggs, lightly beaten
- 1/2 cup bread crumbs
- 1 cup Parmigiano-Reggiano
- 1/4 cup chopped fresh flat leaf parsley
- 5 tbsp extra virgin olive oil
- 4 chicken breast halves
- salt and pepper
- 3 to 4 cloves garlic, chopped
- 1 tsp crushed red pepper flakes
- 1 small onion, chopped
- 1 tsp oregano
- 1 (20-oz) can diced or crushed fire-roasted tomatoes
- 1/3 cup choppped fresh basil
- 1 cup shredded smoked mozzarella
Pilaf, Mung bean and sesame

- 1 cup white basmati rice
- 5 3/4 cups water
- 1 tsp butter
- 2 tsp salt
- 1 cup mung beans
- 4 tbsp sesame seeds
- 1/3 cup cooking oil
- 2 tbsp finely chopped garlice (6 medium cloves)
- 2 bunches green onions, finely chopped
- 2 tbsp ground ginger
- 1/2 tsp turmeric
- 1 tsp cayenne pepper
Dipping Sauce for Salad Rolls

Put all ingredients in a bowl and mix well to combine
- 1 small red chili, thinly sliced
- 3 1/4 tbsp sugar
- 2 cloves garlic, minced
- 2 tbsp finely shredded carrot
- 1 cup rice vinegar
- 2 tbsp lime juice
- 4 tbsp fish sauce
- 1 tbsp chopped peanuts
Creamy Butternut Squash Soup

- 1/4 cup chopped onion
- 1 tbsp butter
- 3 cups cubed peeled butternut squash
- 1 medium potato, peeled and cubed
- 1 1/2 cups water
- 1 1/2 tsp chicken bouillon granules
- 1/4 tsp salt
- Dash pepper
- 1/4 cup evaporated milk
Agedashi tofu

- Mentsuyu sauce:
- 1 lb block firm tofu, pressed
- potato starch
- oil for frying
