Fried Rice with Bacon & Fresh Coriander

Heat the oil in a large saute pan or wok and scramble the eggs
- 1 tsp (5 mL) olive oil
- 2 eggs, beaten
- 1/4 lb (125 g) bacon, chopped
- 2 cloves garlic, chopped
- 1 red bell pepper, chopped
- 1 small onion, chopped
- 1 cup (250 mL) mushrooms, sliced
- 1 1/2 cups (375 mL) cooked white rice
- 1/2 cup (125 mL) soy sauce
- 1/2 tsp (2 mL) chopped fresh ginger
- 1/2 tsp (2 mL) dried basil
- 1/3 cup (60 mL) chopped fresh coriander (or parsley)
Chicken in Chipotle Mojo

In a small saucepan combine garlic and the 1/4 cup olive oil
- 6 cloves garlic, smashed
- 1/4 cup olive oil
- 1 teaspoon finely shredded orange peel
- 1/4 cup orange juice
- 1 14 1/2 ounce can fire-roasted diced tomatoes, drained
- 1 canned chipotle chile pepper in adobo sauce
- Salt
- 4 5 ounces skinless boneless chicken breast halves
- Ground black pepper
- 1 tablespoon olive oil
- 1 tablespoon snipped fresh oregano
Soft Onion Breadsticks

In a small skillet, saute onion in oil until tender; cool
- 3/4 cup chopped onion
- 1 tablespoon canola oil
- 1 package (1/4 ounce) active dry yeast
- 1/2 cup warm water (110° to 115°)
- 1/2 cup warm milk (110° to 115°)
- 1/4 cup butter, softened
- 2 eggs
- 1 tablespoon sugar
- 1-1/2 teaspoons salt
- 3-1/2 to 4 cups all-purpose flour
- 2 tablespoons cold water
- 2 tablespoons sesame seeds
- 1 tablespoon poppy seeds
Bruschetta Chicken for Four

Place flour and eggs in separate shallow bowls
- 1/2 cup all-purpose flour
- 2 eggs, lightly beaten
- 1/4 cup dry bread crumbs
- 1/4 cup grated Parmesan cheese
- 4 boneless skinless chicken breast halves (6 ounces each)
- 1 tablespoon butter, melted
- 2 large tomatoes, seeded and chopped
- 3 tablespoons minced fresh basil
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Black Forest Parfaits

Using mixer on medium, beat cream cheese 1 min
- 1/4 cup fat-fat cream cheese, at room temp.
- 1 cup fat-free whipped topping, like Cool Whip
- 1/4 tsp. almond extract
- 2 Tbs. shredded coconut
- 6 Tbs. chopped chocolate bar with almonds
- (about 3 oz.)
- 1 1/2 cups cherry pie filling
Cheesy Chicken and Artichoke Bites

Heat oven to 375°F. If using crescent rolls: Unroll both cans of dough; separate into total of 8 rectangles
- 2 cans (8 oz each) Pillsbury® refrigerated crescent dinner rolls or 2 cans (8 oz each) Pillsbury® Crescent Recipe Creations® refrigerated seamless dough sheet
- 6 slices fully cooked bacon (from 2.1-oz package)
- 1 package (6 oz) refrigerated cooked chicken breast strips, cubed
- 1 box (9 oz) Green Giant® frozen chopped spinach, thawed, squeezed to drain and thoroughly chopped
- 1 can (13.75 oz) quartered artichoke hearts, drained, coarsely chopped
- 2 medium cloves garlic, finely chopped
- 1/2 cup mayonnaise or salad dressing
- 1/4 cup sour cream
- 1/2 cup shredded Asiago cheese (2 oz)
- 1/4 cup grated Parmesan cheese
Barbecued Pork Sandwiches

Place roasts in an 8-qt. Dutch oven; add water and salt
- 2 boneless pork loin roasts (2-1/2 to 3 pounds each)
- 1 cup water
- 2 teaspoons salt 2 cups ketchup
- 2 cups diced celery
- 1/3 cup steak sauce
- 1/4 cup packed brown sugar
- 1/4 cup vinegar
- 2 teaspoons lemon juice
- 20 to 25 hamburger buns

PASTA WITH BRAISED CHICKEN, SAUSAGES, PEPPERS & TOMATOES

You may use any cut of chicken or type of sausage to make this dish
- a few splashes of olive oil
- 6 chicken thighs (skin-on and bone-in)
- 4 Italian sausages
- 2 large onions, diced
- 1 head of whole garlic cloves, peeled
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup (250 ml) of your favourite red wine
- one 28 oz (796 ml) can of tomatoes
- 1 teaspoon (5 ml) of dried oregano
- 2 bay leaves
- a sprinkle or two of sea salt and freshly ground pepper
- one 11b (454 g) box of your favourite pasta
Golden Chicken and Noodles

- 6 boneless skinless chicken breast halves (1-1/2 pounds)
- 2 cans (10-3/4 ounces each) condensed broccoli cheese soup, undiluted
- 2 cups milk
- 1 small onion, chopped
- 1/2 to 1 teaspoon salt, optional
- 1/2 to 1 teaspoon dried basil
- 1/8 teaspoon pepper
