Individual Chocolate Souffles

Preheat the oven to 400°F (200°C)
- softened butter, to grease
- 1/4 cup (60g) superfine sugar, plus an extra 2-3 tbsp (30-45ml) to dust
- 6 oz (175g) bittersweet chocolate (about 70% cocoa solids), chopped
- 4 large eggs, separated
- drop of lemon juice
- confectioners' sugar, to dust
Ravioli in Mushroom-Walnut Cream Sauce

1.HEAT olive oil in large skillet over medium heat
- 12 oz ravioli or tortellini, cooked according to package directions
- 2 Tbsp extra virgin olive oil
- 8 oz mushrooms, sliced
- 1/4 cup walnuts, chopped
- 1 cup heavy whipping cream
- 1/4 tsp black pepper
- 1 1/2 cups freshly grated Parmesan cheese
French Onion Tart

Whirl flour with salt in a food processor
- Crust
- 2 cups All Purpose Flour
- 1/2 tsp Table Salt
- 3/4 cup Unsalted butter
- 1/4 cup Ice water
- 1 tsp White vinegar
- Filling
- 1 tbsp Canola Oil
- 1 Red Onionsliced
- 4 Shallots peeled and sliced
- 1/2 tsp Table Salt
- 1/2 tsp. Granulated Sugar
- 4 Egg
- 1/2 cup 35% heavy Cream
- 1/4 cup milk
- 2 cups Gruyère cheese grated
- 1 tsp Thyme
Brown Butter Mashed Potatoes

Cut the potatoes into large chunks, then steam, boil or microwave them until they're tender
- 2 pounds (1 kg) or so of unpeeled potatoes (about 4 large)
- A stick or 2 of salted butter (4 ounces/125 g)
- A few pinches of nutmeg
- A sprinkle or two of salt and pepper

- 1/4 cup chopped fresh parsley
- 1/4 cup Kraft Parmesan, Romano & Asiago Shredded Cheese.
Churros with Chocolate Orange Sauce

Churros Sift flour with salt
- Churros
- 1/2 cup all purpose flour
- 1/2 tsp. salt
- 1/2 cup water
- 1/4 cup butter, cut into pieces
- 2 large eggs
- Vegetable oil, for frying
- Icing sugar, for dusting churros
- Cinnamon, for dusting churros
- Chocolate Orange Sauce
- 1 cup whipping cream (35 %)
- 1 cup finely chopped dark chocolate
- Zest of 1/2 orange
- 1 tbsp. orange liqueur
- 1 tsp. vanilla

Preheat oven to 350°F. Coat shallow 2-qt
- 3 cups shredded cooked chicken
- 1 can (15 oz.) vegetarian chili with beans
- 1 pkg. (12 oz.) frozen corn, thawed, drained
- 1 small onion
- 1 Tbs.oil
- 1 pkg.(24oz.) refrigerated home-style mashed potatoes, such as Country Crock
- 1 cup shredded white Cheddar cheese, 4 oz.
- 1 tsp.chopped fresh cilantro
Oh Henry Bars

Melt butter or margarine with both sugars
- 1 cup butter or margarine
- 1/2 cup granulated sugar
- 1 cup brown sugar
- 4 cups quick-cooking oatmeal
- 6 ounces chocolate chips
- 1 cup crunchy peanut butter
EMERIL'S ESSENCE CREOLE SEASONING

- 2 tablespoons salt
- 2 tablespoons garlic powder

- 1 tablespoon onion powder

- Souffle:
- 4 eggs yolks
- 3 tbsp. sugar
- 1/4 cup all-purpose flour
- 3/4 cup plus 2 tbsp. milk
- 1/4 cup creme de cacao
- 5 oz. white chocolate, melted
- 5 egg whites, at room temperature
- 1/4 tsp cream of tartar
- 2 tbsp. sugar
- Confectioner's sugar
- Sauce:
- 10-oz package frozen raspberries in syrup, thawed and drained
- 6 tbsp. raspberry preserves
- 1 tbsp. raspberry liqueur (optional)
- 1/3 cup chopped sweet cherries, well drained
