Miso Tahini Dressing

A home made change of pace dressing for salads and hummus
- 1/4 cup tahini
- 1 tablespoon red miso
- 1 tablespoon lemon juice
- 1/4 cup or more warm water
- freshly cracked black pepper
Oatmeal Peanut Butter-Chocolate Cheesecake Bites

Preheat oven to 350 degrees
- 1 (17.5 oz.) Betty Crocker oatmeal cookie mix
- 1/2 C Chilled butter, cut into small pieces
- 2 8oz. Packages cream cheese, softened
- 1/2 C Sugar
- 2 Tbs. flour
- 1 Large egg
- 2/3 C peanut butter morsels
- 2/3 C semisweet chocolate morsels
Chocolate Mint Brownies

Do be careful not to overbake these brownies
- 8 ounces (225g) unsweetened chocolate (see Note)
- 8 ounces (225g) unsalted butter
- 5 large eggs, at room temperature
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon instant coffee or espresso
- 3 1/2 cups (700g) sugar
- 1 2/3 cup (170g) sifted flour
- 2 about 2 pounds (1kg) chocolate-covered thin mints (peppermint patties)
- Optional: 1 1/2 cup (150g) walnuts, pecans, or almonds, toasted and coarsely chopped
Homemade Girl Scout Cookies: Samoas « Baking Bites

There are two ways to get the shape for these cookies
- Homemade Samoas (a.k.a. Caramel de-Lites)
- Cookies
- 1 cup butter, soft
- 1/2 cup sugar
- 2 cups all purpose flour
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- up to 2 tbsp milk
- Topping
- 3 cups shredded coconut (sweetened or unsweetened)
- 12-oz good-quality chewy caramels
- 1/4 tsp salt
- 3 tbsp milk
- 8 oz. dark or semisweet chocolate (chocolate chips are ok)
Satay Lettuce Wraps

Directions: Using a food processor, finely chop the peanuts
- 1/2 cup dry-roasted peanuts
- 2 tablespoons vegetable or peanut oil
- 1 1/4 pounds thinly sliced pork or chicken cutlets, or 1 1/2 pounds ground pork or chicken
- Pepper
- 1/4 pound oyster, baby white or shiitake mushrooms, chopped or thinly sliced
- 1 bunch scallions, chopped or thinly sliced
- 4 cloves garlic, chopped
- One 1 1/2-inch piece fresh ginger, cut into thin matchsticks or finely chopped
- 2 tablespoons creamy peanut butter
- 1/2 cup unsweetened apple juice or chicken stock
- 1/4 cup tamari sauce (eyeball it)
- A few dashes hot pepper sauce
- 1 small head iceberg lettuce, core removed and head quartered

Olive Garden Salad with Homemade Dressing

1. Combine all dressing ingredients in a blender or small food processor and mix until well combined
- Dressing:
- 2 romaine lettuce hearts (you just want the hearts, they will give you a crisp crunchy texture.)
- 3 Roma tomatoes
- 1/2 red onion
- 1/2 C medium sized olives
- 1 C croutons
- 1/4 C Parmesan cheese
- 1/2 C mayonnaise
- 1/3 C white vinegar
- 1 t Canola oil
- 2 T corn syrup
- 4 T Parmesan cheese
- 1 t minced garlic
- 1/2 t Italian Seasoning
- 1/2 t parsley, dried
- 1 T lemon juice

Cook noodles according to package directions; drain and set aside
- 8 ounces medium egg noodles, uncooked

- 2 cups chicken broth
- 1 cup milk
- 2 teaspoon salt

- teaspoon black pepper
- 2 cups chopped cooked rotisserie chicken
- 1 (4-ounce) can sliced mushrooms, drained
