Almost-Famous Cheddar Biscuits

- Cooking spray
- 1 3/4 cups all-purpose flour
- 1 tablespoon plus 2 teaspoons baking powder
- 2 1/2 teaspoons sugar
- 1/4 teaspoon salt
- 3 tablespoons vegetable shortening, at room temperature
- 4 tablespoons cold unsalted butter, cut into 1/2-inch pieces
- 6 ounces grated yellow cheddar cheese (about 1 1/4 cups)
- 3/4 cup whole milk
- 3 tablespoons unsalted butter
- 1 clove garlic, smashed
- 1 teaspoon chopped fresh parsley
“Happy” Pork Steak

Heat oil in large skillet; add pork
- 6 pork blade steaks, (1/2-3/4-inch thick), seasoned with salt and pepper
- 2 tablespoons corn oil, OR olive oil
- 4 cloves garlic, minced
- 1 small white onion, chopped
- 2 cups uncooked rice
- 4 plum tomatoes, chopped
- 2 medium jalapeno chiles, minced
- 1 cup beer , or water
- 2 cups chicken broth, or water
- fresh cilantro, chopped

Directions: Pulse the flour, salt and pepper, then add butter and pulse until the mixture resembles coarse meal

New York-Style Cheesecake

Our best New York–style cheesecake recipe started with a classic graham cracker crust
- Graham Cracker Crust
- 1 cup graham cracker crumbs (4 ounces, 8 whole crackers, broken into rough pieces and processed in food processor until uniformly fine)
- 1 tablespoon granulated sugar
- 5 tablespoons unsalted butter, melted, plus additional 1 tablespoon melted butter for greasing pan
- Cheesecake Filling
- 2 1/2 pounds cream cheese, cut into rough 1-inch chunks and left to stand at room temperature for 30 to 45 minutes
- 1/8 teaspoon table salt
- 1 1/2 cups granulated sugar (10 1/2 ounces)
- 1/3 cup sour cream (2 1/2 ounces)
- 2 teaspoons lemon juice from 1 lemon
- 2 teaspoons vanilla extract
- 2 large egg yolks
- 6 large eggs

- 6 tomatillos, husked, washed, and grilled until blackened
- 1 serrano, grilled until blackened
