Black Bean, Corn and Chorizo Soup

- 3/4 pound Chorizo sausage, casings removed
- 2 medium carrots, minced
- 2 jalapeños, seeded and minced
- 1 onion, chopped
- 1 (32-ounce) box low-sodium chicken broth
- 2 (15-ounce) cans black beans, drained
- 1 (15.25-ounce) can niblet corn, drained
- 1 (15-ounce) can tomato sauce
- 2 teaspoons fresh lime juice
- 1 teaspoon ground cumin
- Garnish: sour cream, shredded Cheddar cheese
Chicken & Green Bean Casserole

Saute onions in butter. Mix all ingredients except cheese
- 1 medium onion; chopped
- 1 can water chestnuts; sliced
- 2 cups French style green beans; drained
- 1 medium jar sliced pimento; drained
- 1 box long grain & wild rice; cooked
- 3 cups cooked, chopped chicken
- 1 can cream of celery soup
- 1 cup mayonnaise
- 1 cup cheddar cheese; grated
Cookie Recipe

Preheat oven to 400 degrees
- 1 stick of butter
- 1 egg
- 1/2 cup of peanut butter
- 1/2 cup of brown sugar
- 1 cup sugar (1/2 cup in mix and 1/2 cup to roll)
- 1 tsp vanilla
- 1/4 cup whole wheat flour
- 1 cup all-purpose flour
- 3/4 tsp baking soda
- 1 cup chocolate chips (1/2 cup Ghirardelli dark
- chocolate chips and 1/2 cup Ghiradelli milk chocolate chips)
Egg Custard

Beat eggs well; add mixed flour and sugar mixture and cinnamon to eggs
- 4 eggs
- 1 cup sugar
- 3 Tbsp self rising flour
- 1 cup milk
- 1 Tbsp butter; melted
- 1/2 tsp vanilla
- 1/4 tsp cinnamon
- Sprinkle top with a little nutmeg
Marvelous Macaroons

Combine coconut, sugar, flour and salt in mixing bowl
- 2 2/3 cups Bakers angel flake coconut
- 2/3 cup sugar
- 1/4 cup all-purpose flour
- 1/4 tsp salt
- 4 egg whites
- 1 tsp almond extract
- 1 cup Dole chopped natural almonds
Chewy Brownie Cookies

Heat oven to 375 degrees. Place sheet of foil on counter top for cooling cookies
- 2/3 cup (2/3 stick) Crisco Shortening
- 1 1/2 cups firmly packed light brown sugar
- 1 tbsp water
- 1 tsp vanilla
- 2 eggs
- 1 1/2 cups pillsbury all purpose flour
- 1/3 cup unsweetened baking cocoa
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 cups semi sweet chocloate chips (12oz)
Cream Cheese Chocolate Fudge Icing

Mix sugar, flour, karo milk, margarine and xook to 238 degrees; soft ball stage
- 3 cups sugar
- 2 squares unsweet chocolate
- 1 stick margarine
- 1 cup can milk
- 1 tsp vanilla
- 4 oz cream cheese
- 1 Tbsp flour
- 1 Tbsp Karo
Peanut Brittle

Mix all ingredients except soda
- 2 cups raw peanuts
- 1 1/2 cups sugar
- 2/3 cup karo syrup
- 2 tsp soda
Cavatini

Mix all ingredients except cheese in a large bowl
- The following ingredients you can add or omit to your liking:
- 1 jar traditional spaghetti sauce
- 1 pkg egg noodles, cooked and drained
- 1 pkg mozzarella cheese
- mushrooms, sliced or diced
- pepperoni, sliced
- canadian bacon, sliced
- sausage or hambuger meat, cooked and drained
- onions, diced
- bell pepper, diced
- black olives, sliced or diced
Coconut Icing

Bring powdered sugar, karo syrup, and water to a boil and cook until it forms a soft ball in water
- 3 cups powdered sugar
- 4 Tbsp Karo syrup
- 1 cup water
- 4 egg whites
- 1 tsp vanilla
