White Christmas Chili

Cut chicken into bit-sized pieces
- Toppings:
- 8 skinned and boned chicken breasts
- 2 medium onions, chopped
- 1 Tbsp vegetable oil
- 2 14oz cans chicken broth
- 4 15.5 oz con cannellini beans, rinsed and drained
- 1 15.5oz can cannellini beans, rinsed, drained, and mashed
- 2 4.5 oz cans chopped green chiles undrained
- 1 tsp salt
- 1 tsp dried oregano
- ½ tsp chili powder
- ½ tsp ground black pepper
- 1/8 tsp ground cloves
- 1/8 tsp ground red pepper
- Shredded Monterey jack cheese with jalapeno peppers, salsa, sour cream, chopped fresh cilantro
Meat Filled Jumbo Shells

Cook jumbo shells according to pkg directions; drain
- 1 pkg (12oz) jumbo shells, uncooked
- 1 lb ground beef
- 1 lb fround pork
- 4 eggs, slightly beaten
- 1 cup flavored bread crumbs
- 1 cup (4oz) shredded mozzarella cheese (optional)
- 3/4 cup finely chopped onions
- 3/4 tsp oregano
- 1/2 tsp salt
- 1/8 tsp pepper
- 3 1/2 cup (32oz jar) spaghetti sauce
- grated parmesan cheese (optional)
Broccoli and Pasta Casseroles

1)Preheat oven to 425°. Process bread in a food proce3ssor until fine crumbs form
- 2 slices whole-wheat bread (1oz)
- 1 heat broccoli (1 lb) cut into florets, stems peeled and cut into ½-inch pieces
- 8 oz whole-wheat fusilli pasta
- 1 Tbsp plus 1 tsp extra-virgin olive oil
- 1 medium onion (5oz), finely chopped (about 1 cup)
- 3 Tbsp flus 1 ½ tsp all-purpose flour
- 1 tsp ground mustard
- 4 cups skim milk
- ¼ cups skim milk
- ¼ cup part-skim ricotta cheese, pureed
- 2 oz grated parmesan cheese (1 cup)
- Coarse salt and freshly ground pepper
Black-Bottom Pecan Cheesecake Pie

1)Preheat oven to 350 2)Unroll piecrust; fit into a 9-inch pie plate according to package directions
- ½ 15 oz package refrigerated pie crusts
- 1 cup semisweet chocolate morsels
- 3 Tbsp whipping cream
- 1 8oz package cream cheese, softened
- 4 large eggs
- ¾ cup sugar, divided
- 2 tsp vanilla extract, divided
- ¼ tsp salt
- 1 cup light corn syrup
- 3 Tsp butter or margarine, melted
- 1 ½ cups pecan halves
- Chocolate syrup (optional)
Turkey Breast w/ Capers and Mushrooms

Pound turkey steak flat. Thinly slice the mushrooms (about 3 cups)
- 8 slices turkey breast tenderloins , approx. 1 1/2 lb
- 1/2 lb mushrooms
- 4 Tbsp flour
- 2-4 Tbsp olive oil
- 1/4 cup chopped parsley
- 4 Tbsp butter
